I’ve made all kinds of sliders from chicken to pulled pork. One of my favorites is this brisket version. I make it almost every time I have brisket leftovers.

This delicious slider recipe starts with slider buns that I toast on the inside with mayo. Then, I add sliced cheese and brisket and bake them to golden, melty perfection. Finally, I top the beef with coleslaw right before serving and watch everyone devour them.

Ingredients

You’ll only need a handful of simple ingredients to make this recipe. You’ll find them all easily at your local grocery store.

  • Brisket: Use leftover sliced brisket you’ve cut into pieces that will fit on the small buns. Our favorite is smoked brisket but you can use this with barbecue brisket too!
  • Cheese: We love the flavor of sharp cheddar cheese but really any flavor of cheese works so feel free to change it up. You can use more or less to make it to your own tastes.
  • Buns: You can use brioche slider buns or Hawaiian rolls. They’re both the perfect size for these brisket appetizers.
  • Coleslaw: I love the ease of grabbing a Doleยฎ creamy coleslaw salad kit to save time when making these brisket sliders with slaw. You can easily make homemade or use a different brand if you want. Feel free to experiment with other slider toppings you love!
  • Mayonnaise and Melted Butter: These add so much flavor! The mayonnaise is spread on the buns before toasting while the butter is brushed over the top after cooking. You can also use butter for toasting the buns.

Be sure to check the recipe card further down the page for the full ingredient list with quantities.

Variations

  • BBQ Brisket Sliders: Shred your brisket and mix it with BBQ sauce before assembling.
  • Brisket Sandwiches: Turn these into larger sandwiches for a meal by using Texas toast or sandwich buns.
  • Spicy: For a kick of extra flavor and heat, add some diced fresh or pickled jalapenos to the coleslaw mix.
  • Zesty slaw: Add diced banana peppers to the coleslaw mix for less heat with a punch of tangy and zesty flavor.

How to Make Brisket Sliders

It doesn’t get much easier than this recipe. A little toasting and baking is pretty much all it takes! The entire process takes less than 30 minutes from start to finish.

  1. Step 1: Toast the Buns. Spread the mayonnaise on the inside of the top and bottom buns. Then toast them mayo-side down in a heated frying pan over medium heat. Cook until golden.
  2. Step 2: Assemble. Place the bottom buns on a baking sheet. Add the sliced cheese, the sliced brisket, and last the top bun.
  3. Step 3: Bake. Bake the sliders for 10 minutes at 375ยฐ F. Remove the sliders from the oven and brush the top of the buns with melted butter.
  4. Step 4: Top with Coleslaw. Remove the top buns and add a heaping spoonful of coleslaw. Replace the top bun and enjoy!

Recipe Tips

  • Adding the mayo. You only need a thin layer of mayo on the buns to get a golden, toasty result.
  • Assemble in the right order. Place the cheese on the bottom bun so you can remove the top to add the coleslaw.
  • Watch the heat. Toast your buns on medium heat and no higher. Don’t try to rush it with higher heat, the buns will just burn.

Serving Suggestions

Sliders are a classic dinner both indoors and out. You’ll find them on tables at all kinds of parties, backyard BBQs, and the like. Here’s some of our favorite dishes to serve them with!

  • For meals, we love them with Boston baked beans and butternut squash mac and cheese for flavors that are so satisfying and comforting.
  • Like burgers, they go great with air fryer curly fries, potato wedges, sweet potato waffle fries, and potato chips.
  • Serve them up for game-day events or any type of gathering with more of your favorite appetizers like jalapeno popper bites, smoked pig shots, and crab artichoke dip.

Storage Tips

These sliders can be stored and reheated, but they’re the best when served fresh and hot.

  • Storing: Refrigerate these sliders for up to 4 days in an airtight container. For longer storage, you can freeze them wrapped individually in clingwrap and place inside an airtight, freezer-safe container or heavy-duty freezer bag for up to 3 months.
  • Reheating: To reheat the sliders, place them on a baking sheet, lightly tent them with foil, and bake at 350ยฐ F until heated through.
  • Make Ahead: You can mix the prepared coleslaw up to a day before making the sliders, but I recommend making the rest of the recipe when ready to serve.
