In this recipe, I am using store bought apple pie filling. It is easier and a great time saver. If you wanted to make homemade apple pie filling, you will want to use baking apples. The most well known baking apple that is used in desserts are Granny Smith apples. This is is because the apples bake well and have that sweet and tart flavor. You need to make sure they are baking apples because otherwise the apples will either not get soft while baking or will get too soft and become mushy.
How to Store Caramel Apple Mini Cheesecakes
Once you have baked the cheesecakes, let them cool for a couple of hours. After they have cooled, add the apple pie filling to the top of the cheesecake bites and place them in an airtight container. This is the best way to protect the apple cheesecake bites. Place the container in the fridge.
You can also place the mini cheesecakes in the freezer. Keep them in the airtight container when placing them in the freezer. You can also place them on a plate, cover with aluminum foil, and freeze them first. Once you have done this, you should be able to wrap them in plastic wrap and then place them in a freezer bag. Just remember to take the plastic off before thawing.
Another option is to freeze the cheesecake bites before adding the apple pie filling. You can add the apple pie filling after they have thawed.

- Graham crackers, crushed
- Granulated sugar
- Butter
- Cream cheese
- Large egg

How to Make Apple Cheesecake Bites
Step 1 – Prep
Preheat the oven to 350 degrees and line a muffing pan with paper liners. Lightly spray with nonstick cooking spray. Set aside. Open can of apple pie filling and pour it into a bowl. Using a butter knife, cut the slices of apples into small pieces. Cover with plastic wrap and place in the fridge until ready to use.
Step 2 – Making the Graham Cracker Crust
In a medium bowl, add graham cracker crumbs, sugar and butter together. Mix until combined. Add a tablespoon of graham cracker mixture into the bottom of each paper liner. In a large bowl, using an electric mixer, beat cream cheese on medium speed until the cream cheese becomes smooth and creamy. Next, add eggs, sugar and vanilla. Beat until combined and then spoon a layer of cheesecake filling on top of the graham cracker crust.
Step 3 – Baking the Cheesecakes
Place muffin tin into the preheated oven and bake for 35-40 minutes or until the cheesecake is set but still a little jiggly in the center. Carefully remove muffin tin from the oven and let cool for 5 minutes. Remove from pan and place on a wire rack and let cool completely.
Step 4 – The Finishing Touches
Once the cheesecakes have cool completely, spoon the apple pie filling on top of each mini cheesecake. Serve immediately or chill until ready to serve.

- 1½ cups graham crackers crushed
- 2½ tablespoons sugar
- ⅓ cup butter, melted

- 8 ounces cream cheese, room temperature
- 1 egg
- ¼ cup sugar
- ½ teaspoon vanilla
- 21 ounce can apple pie filling
Instructions
- Preheat oven to 350° and line a muffin pan with liners and lightly spray with nonstick cooking spray. Set aside.
- In a medium bowl, add graham crackers, sugar, and butter and mix until combined.
- Press the crust into the bottom of the muffin liners.
- In a medium bowl, beat cream cheese until smooth.
- Add eggs, sugar, and vanilla. Beat until combined then spoon cream cheese mixture on top of crust.
- Bake for 35-45 minutes or until cheesecake is set but a little jiggly in the center.
- Remove from oven. Let cool completely.
