In this recipe, I am using store bought apple pie filling. It is easier and a great time saver. If you wanted to make homemade apple pie filling, you will want to use baking apples. The most well known baking apple that is used in desserts are Granny Smith apples. This is is because the apples bake well and have that sweet and tart flavor. Once you have baked the cheesecakes, let them cool for a couple of hours. After they have cooled, add the apple pie filling to the top of the cheesecake bites and place them in an airtight container. This is the best way to protect the apple cheesecake bites. Place the container in the fridge.

Apple cheesecake bites should keep well in the fridge for 5 to 7 days. They will also last 2 to 3 months in the freezer. Take out desired amount of mini cheesecakes from the freezer and place in the fridge overnight to thaw.
