Apple Pie Bites

Apple Pie Bites are small, fun sized, mini apple pies and packed full of flavor! Mouthwatering and delicious, these pie bites are filled with homemade apple pie filling and baked to perfection.

Mini apple pie bites are super simple to make using a store-bought pie crust and a mini muffin pan. Bites-sized and perfectly portioned with no cutting or messes made. These grab and go desserts are perfect for any occasion.

Apple pie has become as American as red, white, and blue. These delicious little treats are perfect served warm in the fall or cooled with ice cream in the summer. This year-round American favorite with be a definite people pleaser.

The Apple Pie Filling

This sweet homemade apple pie filling is quick and easy to make. There are a few key ingredients to this filling that’ll have your mouth watering.

Apples and cinnamon complement each other’s flavors fabulously. The sweet cinnamon balances out the tart apple bringing the duo of flavors to a perfect pair.

Cornstarch is used in pie and baking recipes as a thickening agent to help prevent a watery or runny filling while creating that soft, gooey, delicious apple base.

Lemon juice is a flavor saver for the apples. Have you noticed how lemon juice is squeezed on apples or avocados to prevent them from turning brown? Although you will not taste the lemon juice, it will help the apples stay fresh and juicy while giving your pie a succulent taste.

The main star ingredient to these mini pies are apples of course! Using your favorite baking apple, cut the apples into small diced pieces. The smaller the pieces the better in these cute little mini pies.

The Perfect Golden Crust

It is hard to go wrong with a store-bought pie crust. The difficult part of the process is already done. Using a measuring cup for perfect circles then pressed firmly into the mini muffin pan will leave you with a flawless, flaky, and decadent pie crust.

Avoiding a Soggy Pie Crust

Proper placement in the oven can assure a crispy and flaky pie crust. The lower the better when it comes to pies. The concentrated heat at the bottom of the oven on a lower rack is best.

The bottom pie crust has a big responsibility of holding all the gooey, juicy, hot pie filling in place. Adding a protective layer in between the shell and filling will create a barrier. Try brushing on a light layer of corn syrup or a lightly beaten egg white.

Can Apple Pie Bites be frozen

Apple pie bites are one of the easiest treats to freeze and serve at a later time. Place the already baked Apple Pie Bites on a flat tray then into the freezer, uncovered. Once frozen, take them out and wrap either individually with plastic wrap, or place them in a freezer bag in a single layer, and place them back into the freezer until you are ready to defrost. They can be good for three to four months.

Defrosting is simple. Transfer these little cups from the freezer straight into the fridge, keeping them wrapped. Let the cups defrost in the refrigerator for 24 hours. When ready to serve, place them on a baking sheet. Tent the baking sheet with foil to prevent the golden flakey crust from overcooking and becoming burnt. Reheat at 350° for 15 to 20 minutes or until the filling of the mini pies are warm and bubbling.

Can the Apple Pie Bites be prepared the night before?

These easy to make little apple pie bites can be prepared ahead of time and baked when you are ready. Unbaked pies can be kept in the refrigerator for up to two days when covered loosely with aluminum foil or plastic wrap.

If time allows, it is best to bake them at the time of preparation and store the already baked pies properly to preserve freshness.

How to store baked Apple Pie Bites

Homemade Apple Pie bites should be left out and brought to room temperature. Cooling the apple pie bites usually takes a couple hours cool completely. Once cooled, place in an air tight container or wrap individually with plastic wrap. The apple pie bites can be stored at room temperature for up to two days. If you don’t finish them all within two days, place the container or wrapped bites in the refrigerator for two to three more days.

Apple Pie Bites are a quick and easy on the go type of dessert. Just like any other apple pie, these cute little cups can be served with vanilla ice cream. Spray a delightful little swirl of the fluffy and creamy whipped topping on top before presenting or popping them into your mouth. A caramel drizzled across the top is also delicious.

These sweet and delightful apple pie bites are perfect for any occasion big or small. This is a very kid friendly recipe for when the littles want to help you in the kitchen. The little fingers are able to press the pie dough into the cups with ease. My kids love helping in the kitchen, especially when the payout is a delicious mini perfect sized apple pie bite.

Ingredients for Apple Pie Bites

  • Pillsbury pie crust
  • Granny Smith apples
  • Water
  • Sugar
  • Cornstarch
  • Cinnamon
  • Lemon juice
  • Optional: caramel sauce

How To Make Apple Pie Bites

  • Preheat oven to 450° and spray a mini muffin pan with nonstick cooking spray.
  • In a large saucepan over low heat, bring water, sugar, cornstarch, cinnamon, and lemon juice to a boil, stirring constantly.
  • Continue stirring until sauce thickens, about 3-4 minutes.
  • Add diced apples, stir and let simmer for 8-10 minutes, stirring occasionally.
  • Remove from heat and let cool completely. Set aside.
  • Roll out pie crust on a floured surface and use a ⅓ cup measuring cup to cut out circles for the crust and place in mini muffin pan.
  • Place 1-2 tsp of apple filling in each pie crust.
  • Bake for 15-18 minutes or until edges of pie crust are golden brown.
  • Top with a caramel glaze and serve warm, optional.
