Ingredients
- Pillsbury pie crust: This refrigerated pie crust is all ready to go making mini apple bites easy to make.
- Granny Smith apples: The BEST apples for apple pie. They’re tart and not overly sweet. Feel free to use other apples good for baking but make sure to choose apples with a crisp texture and not too sweet.
- Sugar: Sweetens the apple pie filling.
- Cornstarch: Just a bit for thickening in order to create that soft, gooey, delicious apple base. You can also use arrowroot flour as well.
- Cinnamon: The sweet cinnamon balances out the tart apple while also adding warmth. It’s a popular spice that pairs well with apples. You can also use apple pie spice for a more complex flavor.
- Lemon juice: Adds a bit of acidity that works well to balance the sweetness but it serves a double purpose of keeping the apples from turning brown.
- Caramel sauce: It’s optional but adds another layer of flavor that works great with apples.

How To Make Apple Pie Bites with Pie Crust
Gather all your ingredients, preheat oven to 450ยฐ F, and spray a mini muffin pan with nonstick cooking spray. Then you’re ready to start mixing.
- Step 1: Heat the water, sugar, cornstarch, cinnamon, and lemon juice over low heat until it boils. Stir constantly until the sauce thickens.
- Step 2: Add the diced apples, stir to combine, and let them simmer for 8-10 minutes, stirring occasionally. Remove it from the heat and let it cool completely.
- Step 3: Roll out the pie crust on a floured surface and use a โ cup measuring cup to cut out circles for the crust. Place the circles in the openings of your mini muffin pan.
- Step 4: Add 1-2 teaspoons of apple filling to each pie crust.
- Step 5: Bake until the edges of pie crust are golden brown. Top with the caramel glaze and serve warm.

Store and Reheat
- Store: Store your homemade mini apple pies once thoroughly cooled to room temperature which may take a couple hours to cool completely. Store the cooled bites in an airtight container and store at room temperature for up to two days. If you donโt finish them all within two days, place the container or wrapped bites in the refrigerator for two to three more days.
- Freeze: Flash freeze the baked apple bites on a flat tray and place in the freezer uncovered. Once they’re fully frozen wrap either individually with plastic wrap, or place them in a freezer bag in a single layer, and place them back into the freezer for up to four months.
- Reheat: When ready to serve again, place them on a baking sheet. Tent the baking sheet with foil to prevent the golden flakey crust from overcooking and becoming burnt. Reheat at 350ยฐ for 15 to 20 minutes or until the filling of the mini pies are warm and bubbling. If frozen, thaw them out in the refrigerator overnight.
Expert Tips
- Cut the apples into small diced pieces. The smaller the pieces the better in these cute little mini pies.
- Bake on the lower rack. Proper placement in the oven ensures a crispy and flaky pie crust. The lower the better when it comes to pies. The concentrated heat at the bottom of the oven on a lower rack is best.
- Short on time? Use canned apple pie filling if you’re short on time and want to skip the homemade pie filling.
- Kid-friendly recipe. Get the littles in the kitchen to help! The little fingers are able to press the pie dough into the cups with ease. My kids love helping in the kitchen, especially when the payout is a delicious mini perfect sized apple pie bite.
- Serve. Just like any other apple pie, these cute little cups can be served with vanilla ice cream or top with some fluffy and creamy whipped topping on top! Don’t forget some caramel drizzled across the top!
