Tips
- You can blanch your peaches to make peeling them easier.
- Cut your butter into small cubes, then chill it until ready to use. It makes cutting into the flour much easier and helps create the perfect texture.
- Your water should come to a full boil before you mix it into the cobbler topping.
- Make sure your baking powder is fresh for best results. Old baking powder won’t give your cobbler topping as much rise.
- Give your cobbler filling mixture at least 5 to 10 minutes before constructing the cobbler. This gives it time to macerate and begin creating that juicy filling.
- It’s important to let your cobbler rest until it’s warm and not hot before serving. This allows the filling to set up.
Blueberry Peach Cobbler FAQ
Peaches and blueberries don’t just go together. They belong together. This combination is often used in cobblers, crisps, and crumbles because the sweetness of the peaches and tartness of the blueberries perfectly complement one another.
Boiling water is used in cobbler toppings to achieve their light, pillowy texture. The boiling water combines the dry ingredients quickly and fully activates the leavening agents in the topping, creating a lighter, fluffier final product.
Freestone peaches are ideal for cobblers because of their sweet flavor and easily removed pits. However, yellow peaches are often used, as well, for their balance of sweetness and acidity, which creates a more balanced filling flavor.
