This meatloaf grilled cheese takes two classic comfort food and combines them into one delicious and hearty recipe. Meatloaf and grilled cheese, what’s better than that?

If you’re looking for the ultimate comfort food, then look no further. This is it. Combining meatloaf and grilled cheese, these delicious sandwiches make fantastic lunches or dinners. They’re great for using up that leftover meatloaf. You can also make a fresh batch of meatloaf just for whipping up these grilled cheese masterpieces. Either way, you’re going to love them.

I’ve been making this recipe for years. I’m not sure if other people make it or not – I don’t know anyone else who does – but I thought it was time I shared this absolutely delicious sandwich with the rest of the world. Once you try it, I can guarantee that it will become one of your staple meals.

Meatloaf Grilled Cheese

Meatloaf grilled cheese is one of those things that you didn’t know you needed until you discovered it. I had some leftover meatloaf a few years back, and I was thinking that I didn’t want to just have reheated meatloaf AGAIN. Then, I realized that meatloaf sandwiches are delicious. Grilled cheese sandwiches are delicious. What if I just, well, sandwiched them together? That’s exactly what I did, and life has never been the same.

Crispy, golden brown bread houses a deliciously cheesy meatloaf middle that will knock your socks off. The meatloaf is perfectly seasoned with BBQ sauce while it’s cooked. Then we add slices of meatloaf and pepper jack cheese to the bread and toast it all in a pan. It’s absolutely amazing on every level.

Leftover Meatloaf Grilled Cheese Sandwiches

I love these so much, that I actually make the meatloaf especially for them, but I’ll also use leftover meatloaf for them. These grilled are so great for using up that leftover meatloaf without doing the same old boring thing every single time. When you serve these up, your family will flip. You’ve never had a meatloaf sandwich like these, that’s for sure!

Should a meatloaf sandwich be hot or cold?

They’re delicious either way. It depends on your personal preference and your kind of sandwich. If you’re just adding some ketchup or mayo to some bread, then cold works. Of course, you want this grilled cheese version to be hot.

What is the best way to reheat meatloaf?

Place the meatloaf in a baking dish and add 1 tablespoon of water or beef broth. Then, cover it with aluminum foil and bake it for 25-30 minutes at 250 degrees until it’s heated through.

How do you know if meatloaf is fully cooked?

Use an instant-read thermometer to check for doneness. Insert the thermometer into the center of the thickest part of the meatloaf. If it readers 160 degrees, it’s done. Do not cut into your meatloaf to check for doneness. You’ll lose all the juice, and it will be dry.

Is mayonnaise good on grilled cheese?

You’ve probably heard that you can use mayo instead of butter on your grilled cheese. It’s true! They both work well. It should be noted that the flavor is slightly different when you use mayo in place of butter.

  • Add shredded cheese to the outside of the bread for a super crispy, cheesy exterior.

Storage and Reheating

Do not store prepared meatloaf grilled cheese. They’re never as good the next day or later in the day. Make as many as your family will eat.

You can store this meatloaf in the refrigerator in a tightly-sealed container for up to 4 days. For longer storage, wrap the meatloaf tightly in a double layer of plastic wrap and then a layer of foil and freeze it for up to 6 months.

To reheat the meatloaf from frozen, defrost it in the refrigerator overnight and then follow the reheating instructions in the FAQ above.

What to Serve with Meatloaf Grilled Cheese Sandwiches

These are great as a stand alone meal and are also delicious with French fries, onion rings, potato chips, and a side salad. Macaroni salad, potato salad and beans are also a delicious side.

Ingredients for Meatloaf Grilled Cheese

It only takes a few simple ingredients to make both the meatloaf for this grilled cheese sandwich and the meatloaf grilled cheese sandwiches themselves. You’ll easily find all of the ingredients at your local grocery store.

For the Meatloaf

  • Ground beef
  • Large egg
  • Mustard
  • BBQ sauce
  • Garlic salt
  • Black pepper
  • Minced onions
  • Bread crumbs

For the Grilled Cheese

  • Pepper jack cheese
  • Bread
  • Butter

How to Make Meatloaf Grilled Cheese

Making these meatloaf grilled cheese sandwiches is just as easy as gathering the ingredients. All it takes is a little mixing and baking for the meatloaf, and then you simply slice it and create your grilled cheese!

Step 1: Make the Meatloaf

Mix all ingredients except for the breadcrumbs in a medium bowl. Once mixed well, add the bread crumbs and mix again. Form into an oval loaf and place in a 4×8 baking pan. Then, top it with additional BBQ sauce.

Step 2: Bake

Cover the dish with foil and bake at 375 degrees for 45 minutes or until fully cooked. Then, remove the meatloaf from the oven and let it rest for at least 20 minutes.

Step 3: Make the Meatloaf Grilled Cheese

Slice the meatloaf into ¾-inch slices. Butter one side of each piece of bread. In a large frying pan or skillet over medium heat, place a slice of the bread buttered side down. Then, place a piece of pepper jack cheese followed by a warm meatloaf slice, or slices, to cover the bread. Then top with another slice of cheese and the second slice of bread with the buttered side up. Cook until the bottom of sandwich is golden brown then flip sandwich with a spatula and repeat on the other side until the cheese melts and the bread is golden brown.

Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1 tablespoon mustard
  • ¼ cup BBQ sauce

Instructions
