Mini Apple Cobbler with Brown Sugar Pecan Topping

This mini apple cobbler recipe takes classic apple cobbler and gives it a twist AND a turn. Sweet apple filling is topped with classic cobbler dough and a sweet, crunch brown sugar pecan topping. Then, everything is baked in mini paper baking pans to create single-serve cobbles perfect for the holidays, special occasions, or just a fun weeknight dessert.

We love cobblers. Our mom made an absolute ton of them growing up, and today, we make them for our family, as well. From classic peach cobbler to sweet and tangy strawberry rhubarb cobbler and everything in between, we just can’t get enough of this classic, rustic dessert.

Of course, in addition to a love of cooking and baking, our mom instilled a love of changing up the classics, which is what we did with these mini apple cobblers. They have all the classic flavor you love, and their served in a fun little package.

How to Make This Mini Apple Cobbler Recipe

Apple Filling

1: Preheat the oven to 375 degrees and place nine 4 ยฝ-inch round disposable paper baking cake pans on a baking sheet. Lightly spray them with non-stick spray and set aside.

2: Peel and slice the apples to ยผ-inch thickness. Then, combine them with the remaining filling ingredients in a bowl and stir thoroughly. Let the mixture sit for 5 minutes while preparing the cobbler topping.

Cobbler Topping

1: Whisk the dry topping ingredients in a medium bowl. Then, use a pastry cutter or two forks to mix the cold butter into the flour until crumbly.

2: Pour boiling water into the flour mixture and stir until combined.

3: Divide the apple filling equally between the paper pans. Then, spoon the topping mixture over the filling.

Brown Sugar Pecan Crust

1: Mix all the crust ingredients in a small bowl until combined.

Ingredients

Apple Filling

  • 4 Granny Smith apples peeled, sliced
  • โ…” cup granulated sugar
  • โ…“ cup brown sugar
  • 2 Tbsp lemon juice
  • 1 Tbsp cornstarch
  • ยฝ tsp ground cinnamon
  • โ…› tsp ground nutmeg

Cobbler Topping

  • 1 ยฝ cups all purpose flour
  • โ…“ cup brown sugar
  • โ…“ cup granulated sugar
  • 1 ยฝ teaspoon baking powder
  • ยฝ teaspoon salt
  • ยฝ cup butter, 1 stick, cut into small pieces
  • ยฝ cup boiling water

Brown Sugar Pecan Topping

  • ยพ cup brown sugar
  • ยผ cup all purpose flour
  • ยพ cup chopped pecans
  • ยผ cup butter, melted

Instructions

  • Preheat the oven to 375ยฐ and place (9) 4ยฝ-inch round disposable paper baking cake pans on a baking sheet. Lightly spray with non-stick cooking spray. Set aside.

Apple Filling

  • Peel and slice apples ยผโ€ thick and place in a large bowl.
  • Sprinkle sugar, brown sugar, lemon juice, cornstarch, cinnamon, and nutmeg over apples. Stir gently and let sit for 5 minutes while preparing the flour mixture.
  • Spoon apple mixture into the prepared paper baking pans.

Cobbler Topping

  • In a medium bowl, whisk flour, brown sugar, sugar, baking powder and salt together until combined.
  • Using a pastry blender, or two forks, mix butter into flour mixture until crumbly.
  • Pour boiling water into the flour mixture. Stir until combined.
  • Spoon topping mixture over apples and gently spread making sure to cover the apples completely.

Brown Sugar Pecan Topping

  • In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  • Spoon brown sugar pecan mixture evenly over each cobbler topping.
  • Bake for 35 – 45 minutes.
  • Serve warm with a scoop of vanilla ice cream or whipped topping and enjoy.
