Ingredients

  • 1 cup broccoli florets, chopped
  • 1 sweet potato, peeled and diced into bite-size pieces
  • ยผ cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 ยฝ cups sharp cheddar cheese, shredded
  • 1-2 tablespoons olive oil, for frying

Instructions

  • In a medium sized pot, add sweet potatoes and enough water to cover them. Cook over medium heat until sweet potatoes are fork tender.
  • In another pot, add broccoli and ยผ cup of water. Cover with lid and let steam over low-medium heat.
  • Once sweet potatoes and broccoli are both tender, remove from heat and add to a large mixing bowl.
  • Using a hand mixer or potato masher, mash the broccoli and sweet potatoes.
  • Next, add the breadcrumbs, garlic powder, and onion powder. Mix until fully combined.
  • Next, add the sharp cheddar cheese and mix until incorporated.
  • In a medium sized pan, heat oil over low-medium heat.
  • Form sweet potato broccoli mixture into patties and fry on both sides until crispy.
  • Remove from the pan and set on paper towels to absorb any excess oil.
  • Let cool before serving.
