We love Mississippi pot roast, and this time of year, we love to make all kinds of stew recipes. So, we decided to experiment with combining the two to create these pot roast bites. It’s a classic Mississippi pot roast recipe, but we cube the roast before cooking. When it’s all done, we have a super tender, zesty beef dinner that tastes like pot roast but eats like a stew.

2: Top the meat with the seasonings, followed by the au jus and ranch mixes, followed by the pepperoncini, sliced butter, and pepperoncini juice.

3: Cover and cook until the meat is super tender.

4: Enjoy with mashed potatoes, rice, or pasta.

Ingredients

  • 2.5 pounds boneless chuck roast or beef shoulder roast, cut into 1-inch chunks
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon black pepper
  • ยฝ teaspoon red pepper flakes
  • 1 packet au jus mix
  • 1 packet dry ranch dip mix
  • 8-10 pepperoncini
  • ยฝ cup pepperoncini juice
  • ยฝ cup butter, sliced

Instructions

  • Using a 6 or 8 quart slow cooker, lightly spray with non-stick cooking spray.
  • Add onions and garlic to the bottom, followed by the roast., and sprinkle with the seasonings.
  • Sprinkle the au jus packet and ranch dip packet over the top.
  • Place 8-10 pepperoncini on top, followed by pats of butter.
  • Pour pepperoncini juice over the top..
