- 2.5 pounds boneless chuck roast or beef shoulder roast, cut into 1-inch chunks
- 1 onion, diced
- 3 garlic cloves, minced
- 1 teaspoon Slap Ya Mama seasoning
- 1 teaspoon black pepper
- ½ teaspoon red pepper flakes
- 1 packet au jus mix
- 1 packet dry ranch dip mix
- 8-10 pepperoncini
- ½ cup pepperoncini juice
- ½ cup butter, sliced
Using a 6 or 8 quart slow cooker, lightly spray with non-stick cooking spray.
Add onions and garlic to the bottom, followed by the roast., and sprinkle with the seasonings.
Sprinkle the au jus packet and ranch dip packet over the top.
Place 8-10 pepperoncini on top, followed by pats of butter.
Pour pepperoncini juice over the top..
Cover and cook on high for 6-8 hours or low for 10-12 hours.
Serve with mashed potatoes, rice, or noodles.
- Choose a roast with plenty of marbling and connective tissue. They'll break down as the pot roast cooks and make the beef extra tender and juicy.
- Skip the tears when dicing your onion by chilling it in the refrigerator for about 30 minutes before cutting it.
- Be sure to add the garlic and onions to the bottom of the slow cooker. Being in direct contact with the bottom will get them nice and tender.
