Ingredients

  • Chuck Roast: This cut is super flavorful and has just the right amount of fat to make it fall-apart tender after slow cooking. Look for one that’s well-marbled for the best results.
  • Onions: Any yellow or white onion works fine here and adds a nice flavor. 
  • Garlic: Fresh garlic will give your pot roast the best flavor, but you can also use jarred or even garlic powder.
  • Carrots: These sweeten as they cook and soak up all that delicious cooking liquid. You can use large carrots or baby carrots, whatever you have on hand. 
  • Celery: Adds a small amount of flavor and soaks up some of the broth, making it super tender. You can leave this out if you are not a fan. 
  • Seasoning packets: We use ranch seasoning, brown gravy mix, and an Italian dressing packet to add all the flavor to the gravy and help to thicken it up. 
  • Beef Broth: I recommend using low-sodium broth because the packets have plenty of salt.  Water would also work here.

  3. Step 3: Add liquid.  Pour the beef broth into the crock pot around the roast.

  • Give it a sear: If you sear your chuck roast on all sides before you add it to the slow cooker, it will have a deeper flavor.
  • Make clean up a breeze: Spray your slow cooker with nonstick cooking spray or a slow cooker liner. Then you won’t need to scrub as much!
  • Low and slow: I highly recommend cooking your crock pot beef chuck roast on low, as this will give you the most tender results. 
  • Storing: Keep leftovers in an airtight container for up to three days. You can also freeze leftovers for up to 3 months. However, while the beef freezes well, the veggies can turn mushy, so I suggest removing them before freezing. Thaw your leftovers out in the fridge overnight before reheating in a saucepan or microwave, adding a splash of broth if needed.

How long does it take to cook a chuck roast in the Crock Pot? 

Cook it on low for 8-9 hours or on high for 4-5 hours for the best results. I prefer cooking it on low rather than high so that the collagen and connective tissue have plenty of time to break down.

Why is my chuck roast in the crock pot tough? 

If your chuck roast is tough, that usually means that you did not cook it long enough. Place the lid back on the slow cooker, and cook it for another hour or so, before rechecking it. 

Do I need to sear my chuck roast before adding it to the slow cooker?

No, it’s not necessary. It does add some color and can help to lock in the juices and flavor, but since we are cooking it with plenty of liquid, there’s little chance it will dry out. If you do prefer to sear, simply heat up some oil in a skillet and brown all the sides of the roast before placing it in your slow cooker.

Ingredients

  • 3 pound chuck roast
  • 1 medium onion diced
  • 3 cloves garlic
  • 3 carrots sliced
  • 3 stalks celery sliced
  • 1 packet Ranch dressing mix
  • 1 packet Good Seasonings® Italian seasoning mix
  • 1 packet brown gravy mix
  • 1 cup beef broth

Instructions

  • In a 6 or 8 quart crock pot, spray with a non-stick cooking spray or use a liner.
  • Place diced onions in the bottom followed by the chuck roast.
  • Sprinkle all seasoning packets on top of the meat.
  • Add carrots and celery.
  • Pour beef broth into crock pot, cover and cook on high for 5-6 hours or low for 8-10 hours.

Notes

  • Thicken the gravy: For a thicker gravy, mix a cornstarch slurry, and pour it into the slow cooker just about 30 minutes before serving. 
  • Shorten the cooking time: If you don’t have 8 hours, cut the roast into even-sized pieces to get it done and on the table faster.
  • Storage: Store in an airtight container with juices for up to three days.
