Expert Tips

  • Grate the carrots finely: Finely grated carrots blend into the batter better and help create soft, moist cupcakes.
  • Don’t skip peeling the carrots: Freshly peeled carrots give you the best texture and flavor.
  • Don’t overmix the batter: Once you add the dry ingredients, fold just until everything is incorporated. Overmixing can make the cupcakes dense.
  • Use softened cream cheese and butter: This is the easiest way to get smooth, creamy frosting without lumps.
  • Don’t overfill the liners: Filling them about ยพ full gives the cupcakes enough room to rise without overflowing.
  • Let the cupcakes cool completely: Cream cheese frosting doesn’t belong on warm cupcakes. Let them cool completely first.
  • Check with a toothpick: Start checking around the 20-minute mark. When a toothpick inserted into the center comes out clean, they’re ready.
  • Chop the walnuts fairly small: Smaller walnut pieces distribute nicely throughout the batter and make each bite easier to enjoy.
  • Add the frosting after cooling: For the prettiest piped frosting, make sure the cupcakes are completely cool.

Carrot Walnut Cupcakes FAQs

What makes carrot walnut cupcakes moist?

Finely grated carrots and whole milk Greek yogurt help keep these carrot walnut cupcakes soft and tender. Vegetable oil also contributes moisture without adding a strong flavor, while the brown sugar adds richness.

What is the best way to grate carrots for carrot cupcakes?

Peel the carrots first, then grate them finely using a box grater or similar fine grating surface. Smaller shreds distribute more evenly throughout the batter and help create tender cupcakes.

How do I keep carrot cupcakes from becoming too dense?

Avoid overmixing once the dry ingredients are added. Fold the flour mixture into the wet ingredients just until combined, since excessive mixing can result in dense cupcakes.

What spices taste best in carrot walnut cupcakes?

Cinnamon, nutmeg, and ground cloves create the classic warm spice flavor in these cupcakes. If you prefer a more intensely spiced carrot cake, you can increase the cinnamon or add a little pumpkin pie spice.

What can I add to carrot walnut cupcakes besides nuts?

Raisins and shredded coconut are classic additions that work well with carrot cake flavors. You can also add orange zest or adjust the spices if you want to change the flavor without making major changes to the batter.

How do I get smooth maple cream cheese frosting?

Use softened cream cheese and softened butter before mixing. Beat them until light and fluffy, then add the maple extract, powdered sugar, and salt and continue mixing until the frosting is smooth.

How do I keep carrot walnut cupcakes from drying out?

Store frosted cupcakes covered in an airtight container in the refrigerator. Keeping them covered helps prevent the cupcakes from drying out and also keeps them from absorbing refrigerator odors.

Can I freeze carrot walnut cupcakes with the frosting?

Yes, you can. Wrap unfrosted cupcakes tightly in plastic wrap and freeze for up to 2 months in an airtight, freezer-safe container.
