I make pastries of all kinds all year long, but when the warm weather comes around, I really love to focus on using in-season fruits. Throughout the summer, I make berry pastries and all kinds of other fruit variations made with fresh fruit. Thanks to a neighbor with a couple of peach trees, I’m able to make some of the freshest, most delicious peach puff pastries around. And even if you don’t have a fruit tree in your yard, now that peaches are in season, the ones at your grocery store are almost certainly from North America. So dive into this delicious peach puff pastry recipe and enjoy big bites of summer!

Peach Puff Pastry

This delicious pastry starts with a sweet peach filling and a sweet and tangy cream cheese filling. I layer them on top of one another on puff pastry triangles that I roll up much like a crescent roll, and then I bake them to golden brown, flaky, buttery perfection. Finally, I drizzle the pastries with a simple glaze to finish the classic pastry profile. The result? Delicious pastries that everyone loves and no one can stop eating!

Peach Puff Pastry Ingredients

Although both fillings are made from scratch, you’ll only need some simple ingredients to make this recipe. Most of them are probably in your kitchen right now, and anything you don’t have can be found easily at your grocery store.

  • Store-bought puff pastry sheets
  • Ripe peaches
  • Sugar
  • Brown sugar
  • Cream cheese
  • Sugar
  • Egg yolk
  • Vanilla extract
  • Large egg
  • Water
  • Powdered sugar
  • Milk

How to Make Peach Puff Pastry

Making the peach and cream cheese fillings are the most labor-intensive parts of this recipe, and they only take a few minutes. The entire thing comes together super quickly and easily, so it’s perfect anytime you feel like making it! It is a bit on the messy side but it so worth it.

Step 1: Prep

Preheat the oven to 375 degrees and line a baking sheet with parchment paper.

Step 2: Make the Peach Filling

Combine the peaches, sugar, and brown sugar in a medium bowl and let sit.

Step 3: Make the Cream Cheese Filling

Beat the cream cheese for 2 to 3 minutes in a medium bowl until fluffy. Then, add the sugar, egg yolk, and vanilla extract and beat again until combined.

Step 4: Cut the Pastry Dough

Roll out the pastry sheets on a lightly floured surface and cut them into triangles (see the photo).

Step 5: Fill

Spread the cream cheese mixture over half of the puff pastry triangles. Then, top with the peach mixture. Top the filling with another puff pastry triangle. Then, roll the triangles up like a crescent roll and place them on the baking sheet.

Step 6: Bake

Whisk the egg and water together and brush the egg wash on the pastries. Bake for 25 to 30 minutes until golden brown. Remove the pastries from the oven and set aside to cool.

Step 7: Glaze

Mix the powdered sugar and milk in a small bowl until combined, then drizzle over the cooled pastry.

Recipe Tips

  • Let the peach mixture sit for at least 10 minutes so the sugars can meld with the peaches.
  • Fully soften your cream cheese for the easiest mixing.
  • Brush your egg wash evenly over the pastries, but don’t drown them. It only takes a thin, even coat.
  • Let the pastries cool for 5 to 10 minutes before adding the glaze so it sticks to the pastry.

  • Use your favorite berries for the filling.
  • You can use diced apples, pears, or pineapple for this filling.
  • Try a thin layer of chopped nuts to the filling before rolling it up.

Any puff pastry you find in your freezer section is perfectly serviceable, but when it comes to the best of the best the top two most consistently preferred brands are Pepperidge Farm and Dufour. Of those two, Dufour tends to be preferred when there is a choice because it uses simple, natural ingredients and is so easy to work with.

When are peaches in season?

Peaches are in season any time from May through late September depending on the region.

Can you just bake puff pastry?

While puff pastry is almost always used as a flaky, delicious vehicle to house sweet or savory fillings, you can actually just bake it all on its own if you want. Simply follow the package instructions.

Are puff pastries vegan?

Believe it or not, these days almost all mass-produced puff pastries are vegan. That’s because they’re made with vegetable fats rather than butter. The good news is that the different fat doesn’t affect the flavor or texture.

Can you freeze peach puff pastries?

Absolutely. These peach puff pastries freeze well when stored properly and will last for up to a month.

Secret to Baking Puff Pastry

To make great puff pastry, remember these important points.

  • When cutting puff pastry, cut straight down – never on an angle – to prevent the layers from sticking together and compromising the rise.
  • Use an egg wash for wonderful golden color and sheen.
  • Bake the pastry at 375 to 400 degrees. The exact temperature varies depending on the recipe, but should NEVER fall below 375.
  • Puff pastry should be cold when put into the oven for maximum rise and flakiness.

How to Store Leftover Peach Puff Pastries

Refrigerate these pastries for up to 4 days in an airtight container. For longer storage, place them on a baking sheet, cover them with plastic wrap, and freeze until sold. Then, transfer them to an airtight, freezer-safe container or heavy-duty freezer bag and store for up to a month.

Ingredients

  • 2 boxes puff pastry sheets

Peach Filling

  • 2 cups diced peaches
  • â…› cup sugar
  • â…› cup brown sugar

Cream Cheese Filling

  • 8 ounce cream cheese
  • ½ cup sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Glaze Drizzle

  • ½ cup powdered sugar
  • 1 ½ teaspoon milk

Instructions

  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper.

Peach Filling

  • In a medium bowl, add peach, sugar, and brown sugar. Stir and let sit.

Cream Cheese Filling

  • In a medium bowl, beat cream cheese until fluffy, about 2-3 minutes.
  • Add sugar, egg yolk, and vanilla extract. Beat until combined.

Cut the Pastry Dough

  • On a lightly floured surface, roll out pastry sheets.
  • Cut each puff pastry into diagonal cuts.

  • Spread the cream cheese mixture over each diagonal puff pastry strip, followed by the peach mixture (might not use all of the cream cheese mixture or peach filling).
  • Cover each pastry with remaining diagonal strips of puff pastry.
  • Roll each pastry like a crescent and place on the prepared baking sheet. Repeat with the remaining puff pastry sheet.

Egg Wash

  • Mix egg and water together
  • Brush egg wash over the pastries and bake for 25-30 minutes or until golden brown.

Glaze Drizzle

  • In a small bowl, stir powdered sugar and milk together. Drizzle over pastry when cool enough.
