Pastrami Sliders

These delicious pastrami sliders are loaded with melt-in-your-mouth pastrami, creamy and rich provolone cheese, chopped dill pickles, with mayonnaise and mustard that adds richness, all stuffed between sweet, buttery Hawaiian rolls. A garlicky herb-infused butter is brushed over the top of the buns, and they’re baked to golden perfection.

If you’re looking for the best sliders ever, then you’ve come to the right place. These little sandwiches are a taste of Italy in every bite! I’m a huge fan of sliders, and I love to make all kinds. From breakfast sliders to meaty, cheesy varieties like this recipe, I’m a slider fiend. I also love Italian food. These sliders are the best of both worlds. With pastrami, provolone, and herb butter filled with classic Italian flavors, these sliders are always a huge hit when I make them. And I make them a lot! I routinely make these for parties, and I’ll even whip up a batch for a fun dinner for me and my family. They’re great with French fries, you know. However you serve them, you’ll love them!

Pastrami Sliders

These delicious sliders start with pastrami and provolone cheese slices. I layer them on sweet Hawaiian rolls slathered with mayo and then top with chopped dill pickles and mustard. I top them with the top buns, brush them with garlic butter, and bake until they’re golden on the outside and melty on the inside. It’s a quick and easy recipe that gets me in and out of the kitchen fast and disappears just as quickly when I serve it!

  • Pastrami, thinly sliced
  • Provolone cheese
  • Dill pickles
  • Mayonnaise
  • Yellow mustard
  • Hawaiian rolls
  • Butter
  • Garlic salt
  • Parsley
  • Oregano
  • Basil

How to Make Pastrami Sliders

Making these sliders is a very straightforward process. It only takes a few minutes and a few simple steps from start to finish. You’ll be all done in just about 40 minutes. That’s fast!

Step 1: Prep

Preheat the oven to 350 degrees and lightly spray a baking sheet with non-stick spray.

Step 2: Layer the Sliders

Slice the Hawaiian rolls in half and place the bottom half of the buns on the prepared baking pan. Then, top the buns with a layer of mayo and 2 tablespoons of mustard. Place 6 slices of the cheese over the buns in a single layer. Then, roll up the pastrami slices and make a layer over the cheese, using all the meat. Spoon dill pickles over the pastrami, drizzle with more mustard, and top with the remaining cheese. Finally, place the top buns on the sliders.

Step 3: Make the Garlic Herb Butter

Melt the butter in a small bowl the microwave. Then, stir in all the seasonings.

Step 4: Brush and Bake

Brush the butter mixture on the top of the slider buns and bake for 20 minutes until golden brown and melty. Remove the sliders from the oven, brush with the remaining butter, and enjoy!

  • Only lightly spray the baking sheet with non-stick spray. You want just enough to ensure the sliders don’t stick without making the bottoms soggy.
  • Roll your pastrami slices to give the sliders a nice thickness and a pretty texture.

Ingredients

Pastrami Sliders

  • 1 pound pastrami, thinly sliced
  • 12 slices provolone cheese
  • ยฝ cup chopped dill pickles
  • ยฝ cup mayonnaise, divided
  • ยฝ cup mustard, divided
  • 12 Hawaiian rolls

Garlic Herb Butter

  • ยผ cup melted butter
  • ยฝ teaspoon garlic salt
  • ยฝ teaspoon parsley
  • ยฝ teaspoon oregano
  • ยฝ teaspoon basil

Instructions

  • Preheat the oven to 350 degrees and lightly spray a baking sheet with non-stick cooking spray.

Pastrami Sliders

  • Slice Hawaiian rolls in half lengthwise and place bottom buns on the prepared baking sheet.
  • Spread a layer of mayonnaise over the bottom buns, followed by a couple tablespoons of mustard..
  • Place 6 slices of provolone cheese over the mayonnaise mixture.
  • Roll up the pastrami and place over the cheese using all of the meat.
  • Spoon chopped dill pickles over the pastrami, drizzle additional mustard over the meat and pickles, followed by the remaining provolone cheese slices.
  • Spread more mayonnaise over the top buns along with mustard, and replace top buns on the cheese.

Garlic Herb Butter

  • In a small microwave safe bowl, melt butter.
  • Add all of the seasonings, stir to combine.
  • Brush butter mixture over the top buns and bake for 20 minutes.
  • Remove from the oven and brush remaining butter mixture over the top.
  • Serve hot, cut and enjoy.
