Apple Cinnamon Pastry

Our apple cinnamon pastry is a dream for Danish lovers. Puff pastry pinwheels topped with apple and cream cheese fillings are baked until golden and flaky, then drizzled with a simple, sweet glaze. They’re as pretty and delicious as anything from a bakery and so much fresher!

Pastries are some of our favorite recipes to make. Of course, they’re delicious, but they’re also incredibly versatile. You have your classic sweet options like peach pastry squares for brunch or snacking. That same flaky dough, though, also works with more creative options like jalapeno popper pastry braids for appetizers or ham, egg, and cheese breakfast turnovers. The one thing that remains constant with all of them is that flaky, buttery, golden dough makes them an absolute joy.

Speaking of joys, we’ve added a new Danish to our rotation. Our apple cinnamon pastry tops golden, flaky pinwheels with sweet apple filling and a sweet, tangy cream cheese filling for classic Danish flavors in every bite. You’re going to love them!

Apple Filling

Cream Cheese Filling

  • Cream Cheese: Cream cheese creates the rich, creamy, tangy base for this classic Danish filling.

Flavor Variations

  • Your Favorite Apples: We use Granny Smith, but you can use any of your favorite apples to create different flavor profiles. They’re all a bit different.
  • Other Fruits: You can make this filling with your favorite fruits like pears, peaches, pineapples, plums, and berries.
  • Cheese Danish: Simply leave out the fruit filling for a cheese Danish.
  • Fruit Danish: Likewise, leave out the cheese filling for a fruit Danish.
  • Richer Glaze: Use cream or half and half in place of lemon juice for a richer glaze.

Instructions

Apple Filling

  1. Add all the ingredients to a medium saucepan and bring them to a boil over medium heat, stirring constantly. Cook for 8 to 10 minutes until thickened.
  2. Set the filling aside.

Pastry

  1. Cut each pastry sheet into 8 strips. Then, pinch 2 strips together to create a long strip. Repeat with the other strips.
  2. Place one end of the long strip down on a baking sheet lined with parchment paper. Then, wrap the strip around itself to create a pinwheel. Repeat with the other strips.

Cream Cheese Filling

  1. Beat the cream cheese until light and fluffy. Then, add the remaining ingredients and beat until creamy and well combined.

Construction

  1. Add a heaping spoonful of the cream cheese mixture to the center of each pastry. Then, top it with a spoonful of the apple filling.
  2. Whisk an egg and water, and brush the eggwash over the pastries.
  3. Bake at 400 degrees until golden brown.
  4. Remove the pastries from the oven and let them cool.

Glaze

  1. When the pastries are cooled, combine the glaze ingredients in a small bowl.
  2. Drizzle the glaze over the pastries, give them a few minutes to set, and enjoy.

  • Add your diced apples to a bowl with a little lemon juice and give them a toss as you work to keep them from browning.
  • It’s important to bring the filling mixture to a boil over medium heat. This helps reduce the chances of the filling scorching. Don’t try to rush it by using high heat!
  • Fully soften your cream cheese to get a rich, luxurious filling texture free of any little lumps.
  • Press the end of your strip down onto the parchment paper so it sticks a bit. This helps keep it in place as you wrap your pinwheels.

Ingredients

Apple Filling

  • 2 Granny Smith apples, peeled, diced small (about 2-3 cups)
  • 1 ยฝ cups water
  • ยพ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cornstarch

Cream Cheese Mixture

  • 4 ounces cream cheese, room temperature
  • ยผ cup granulated sugar
  • 1 egg yolk
  • ยฝ teaspoon lemon juice
  • ยฝ teaspoon vanilla extract

Egg Wash

  • 1 large egg
  • 1 ยฝ teaspoon water

Glaze Drizzle

  • ยฝ cup powdered sugar
  • 1 ยฝ teaspoon lemon juice
  • ยฝ teaspoon vanilla extract
  • 1 box puff pastry sheets

Instructions

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Set aside.

Apple Filling

  • In a medium saucepan over medium heat, bring water, apples, sugar, cornstarch, cinnamon, and lemon juice to a boil, stirring constantly.
  • Continue stirring until the sauce thickens, about 8-10 minutes, stirring occasionally.

Pastry

  • Cut each pastry sheet into 8 strips.
  • Take two strips of puff pastry and pinch the ends together to create one long strip.
  • Twist the strip until it forms a braided piece.
  • Place one end of the long, twisted strip down onto the parchment paper and wrap the dough around it, starting in the center and creating a pinwheel base.

Cream Cheese Mixture

  • In a medium bowl, beat cream cheese until light and fluffy, about 2-3 minutes.
  • Add egg yolk, sugar, vanilla, and lemon juice. Beat for 2 more minutes.
  • Add a heaping spoonful of cream cheese mixture to the center of each pastry followed by a spoonful of apple filling.

Egg Wash

  • In a small bowl, whisk egg and water together until combined.
  • Brush egg wash over each pastry.
  • Bake for 23-25 minutes, or until golden brown.

Glaze Drizzle

  • Drizzle each pastry with glaze.
