- Fresh Strawberries: They provide the main fruit flavor and freshness in the dessert, creating the sweet-tart strawberry layer.
- Cream Cheese: The core of the cheesecake filling. It gives the dessert its rich, smooth, creamy texture.
- Eggs: Help the cheesecake filling set properly while baking, giving it structure while staying creamy.
- Golden Oreos: Used in the strawberry crunch topping, they add sweetness and a crunchy texture that contrasts with the creamy cheesecake.
- Sugar: Sweetens multiple layers (strawberry filling, cheesecake filling, and crust) while helping balance the tartness of the strawberries.
- Butter: Binds the crust and crunch topping together while adding richness.
- Graham Cracker Crumbs: Form the base crust, providing structure and a classic cheesecake foundation.
How to Make Strawberry Cheesecake Bars

Step 1: Crush the Golden Oreos in a food processor. Then mix them with the remaining ingredients for the strawberry crunch topping.

Step 2: Spread out on a prepared baking sheet and bake until golden. Set aside to cool.

Step 3: Bring the strawberry filling ingredients to a boil and cook until thickened, stirring constantly. Set aside to cool.

Step 4: Mix the graham cracker crust ingredients. Then, press them into an even layer in a prepared 9×13 glass baking dish. Bake until golden and let cool a bit.

Step 5: Beat the cream cheese until smooth. Then, mix in the remaining ingredients.

Step 6: Spread over the crust and bake until the center is set but a little jiggly. Cool and chill.

Step 7: Beat the heavy cream until thickened. Then, add half the sugar and beat until combined. Add the rest of the sugar and the vanilla and beat until stiff peaks form. Chill until ready to use.

Step 8: Top with the strawberry filling, strawberry crumble, whipped cream, and a slices of fresh strawberries. Enjoy!
Expert Tips
- Use Room-Temperature Cream Cheese: Room-temperature cream cheese blends more smoothly and prevents lumps in the batter.
- Don’t Overbake: The center should still have a slight jiggle when removed from the oven.
- Chill Before Slicing: Refrigerating the bars helps them firm up so they cut cleanly.
- Use Fresh Strawberries: Fresh berries give the topping the best flavor and texture.
