Cheesecake Filling

Add eggs, sugar, and vanilla extract, and beat until combined.
Pour cheesecake batter over the crust.
Bake for 40 minutes or until the center is set but still a little jiggly.
Remove from the oven and let cool completely. Once cool enough, place in the fridge for a couple hours before adding the remaining ingredients.
When ready to serve, top with strawberry topping, add strawberry crunch, top with dollops of whipped cream, and add a slice of strawberry on top.
Homemade Whipped Cream
In a medium bowl, beat heavy cream until thickened.
Add half of the powdered sugar and beat for another 30 seconds.
Add the remaining powdered sugar and vanilla, and mix until stiff peaks form.
Place in the refrigerator until ready to use.
Tips
- Room-temperature cream cheese blends more smoothly and prevents lumps in the batter.
- The center should still have a slight jiggle when removed from the oven.
- Refrigerating the bars helps them firm up so they cut cleanly.
- Fresh berries give the topping the best flavor and texture.
