Srawberry Cheesecake Bars

Ingredients

Strawberry Crunch

  • 20 Golden Oreos
  • 3 ounce strawberry instant gelatin mix
  • ¼ cup butter

Instructions

  • Preheat the oven to 350 degrees and spray a 9x13 glass baking dish with non-stick cooking spray. Set aside

Strawberry Crunch

  • In a food processor, pulse 20 Oreos until coarsely crushed.
  • In a medium bowl, add the crushed Oreos, and stir in the strawberry gelatin.
  • Melt butter, and pour into the crushed Oreos mixture, and mix until incorporated.
  • Spread onto a parchment lined baking sheet and bake at 350 for 10 minutes.
  • Remove from the oven and let cool.

Strawberry Filling

  • Add ingredients to a saucepan and bring to a boil over medium heat. Boil until thick, stirring constantly. Remove from heat and let cool.

Graham Cracker Crust

  • In a medium bowl. Add graham cracker crumbs and sugar. Stir to combine.
  • Add melted butter to the graham cracker mixture. Stir to combine.
  • Add graham cracker mixture to the prepared baking dish. Press down in an even layer and bake for 8 minutes at 350. Remove and let cool a bit.

Cheesecake Filling

  • Beat the cream cheese until smooth, approximately 2-3 minutes.
  • Add eggs, sugar, and vanilla extract, and beat until combined.
  • Pour cheesecake batter over the crust.
  • Bake for 40 minutes or until the center is set but still a little jiggly.
  • Remove from the oven and let cool completely. Once cool enough, place in the fridge for a couple hours before adding the remaining ingredients.
  • When ready to serve, top with strawberry topping, add strawberry crunch, top with dollops of whipped cream, and add a slice of strawberry on top.

Homemade Whipped Cream

  • In a medium bowl, beat heavy cream until thickened.
  • Add half of the powdered sugar and beat for another 30 seconds.
  • Add the remaining powdered sugar and vanilla, and mix until stiff peaks form.
  • Place in the refrigerator until ready to use.

Notes

Tips
  • Room-temperature cream cheese blends more smoothly and prevents lumps in the batter.
  • The center should still have a slight jiggle when removed from the oven.
  • Refrigerating the bars helps them firm up so they cut cleanly.
  • Fresh berries give the topping the best flavor and texture.
