How to Make Loaded Brisket Smashed Potatoes

Step 1: Boil the potatoes until they are fork-tender. Then, drain them and place them on a baking sheet lined with parchment paper or aluminum foil and smash them with the bottom of a glass.

Step 2: Drizzle them with olive oil and sprinkle with garlic powder and pepper over each potato. Bake at 375 degrees until crispy. Heat the brisket and BBQ sauce in a saucepan while the smashed potatoes cook.

Step 3: Remove the potatoes from the oven and top them with cheese.

Step 4: Add BBQ brisket, and crumbled bacon and bake again until the cheese is melted.

Step 5: Remove from oven.

Step 6: Top with green onions and your favorite toppings. Enjoy!

Ingredients
- 1.5 pounds baby creamer potatoes
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- ยฝ teaspoon garlic powder
- 1 cup leftover chopped brisket
- 1-1 ยฝ cups colby jack cheddar cheese
- โ cup crumbled bacon
- โ cup barbecue sauce
- ยผ cup green onions, sliced
- Optional: sour cream
Instructions
- Preheat the oven to 375 degrees and line a baking sheet with parchment paper or aluminum foil. Set aside.
- In a medium pan, over medium heat, cover potato with water and bring to a boil until fork tender. Drain water.
- Place potatoes on the prepared baking sheet.
- Using the bottom of a glass, smash the potatoes.
- Drizzle with olive oil and sprinkle with garlic powder and pepper.
- Bake for 15-20 minutes until crispy.
- Remove from the oven, top with cheese, chopped brisket, and crumbled bacon bits.
- Place back in the oven for 10 more minutes.
- Remove and top with green onions, and your favorite toppings.
