These jalapeno cheese rolls are the homemade dinner roll recipe for those who love a ton of flavor. These soft, squishy rolls are full of cheddar cheese and jalapeños, making them a zesty addition to any meal!

All of you know by now how much I love Mexican and Tex-Mex food, so it should come as no surprise to you that I make dinner rolls loaded with cheese and jalapenos! I have a delicious cheddar jalapeno cornbread recipe that I’ve made for decades, and a few years back, I decided to try adding that flavor combination to homemade dinner rolls. Oh, boy, my entire family was hooked from the first bite. I’ve been serving them ever since. They’re wonderful with beef, chicken, pork, or even seafood, and people can’t get enough of them.

Jalapeno Cheese Rolls

These delicious rolls start with a simple dinner roll dough recipe. I form the dough into little balls then stuff them with some cheddar cheese and diced jalapenos. Then, I place them in a baking dish and let them rise for a bit before baking them to golden brown perfection. When it’s all done, I have soft, fluffy dinner rolls with a little something extra in the middle. That surprise pop of flavor is delicious with anything you can think of, so you’ll be serving them with everything – I promise you that!

Jalapeno Cheese Rolls Ingredients

These rolls use simple ingredients to deliver a ton of flavor. You’ll find everything you need in one super-quick trip to your local grocery store!

  • Butter
  • Whole milk
  • Granulated sugar
  • Rapid Rise instant yeast
  • Large eggs
  • Salt
  • All purpose flour
  • Jalapenos
  • Sharp cheddar cheese

How to Make Jalapeño Cheese Rolls

These rolls are as easy as they are delicious. It’s simply a basic dinner roll dough with one added step before baking. That’s it. The longest part of the recipe is waiting for the dough to rise before baking it.

Step 1: Prepare the Yeast

Melt the butter in a medium Dutch oven or saucepan over low heat. Then, add the cold milk and stir. Add the sugar, stir, and remove the pot from the heat. The mixture should be lukewarm. Finally, add the yeast and stir well.

Step 2: Let the Yeast Bloom

Cover the pan and let it sit for 15 minutes until foamy and bubbly.

Step 3: Make the Dough

Pour whisked eggs and salt into the pan and stir. Then, add the flour, a little at a time, stirring between each addition until combined.

Step 4: Proof

Cover the pan with a clean cloth until the dough has doubled in size.

Step 5: Knead

Place the dough on a lightly floured surface and knead for a few minutes.

Step 6: Make the Dough balls

Pinch off little balls of dough that weigh around 2.5 ounces. Then, stuff the balls with a little shredded cheese and some jalapenos, tucking the dough in the bottom and pinching to seal. Place the balls into a 9×13 baking dish sprayed with nonstick spray.

Step 7: Proof Again

When you’ve filled the baking dish with the dough balls, cover it with a clean towel and let the dough sit for another 45 minutes or until doubled in size.

Step 8: Bake

Bake the rolls on the center rack at 350 degrees for 30 minutes or until golden brown. Brush the baked rolls immediately with melted butter and serve.

Recipe Tips

  • The milk mixture should be lukewarm when adding the yeast. If it’s too hot, the yeast will die. If it’s too cold, the yeast won’t activate.
  • Be sure you use the freshest yeast possible for the best rise.
  • Pinch the dough closed on the bottom after adding the cheese and jalapenos to ensure the top stays nice and smooth.
  • Knead your dough for a few minutes before making the balls. This forms the gluten and helps the dough rise.

Variations

  • Cheddar, Mexican, Colby Jack, and Cheddar Jack all work well in this recipe.
  • Try adding some crumbled bacon along with the cheese and jalapenos.
  • You can make whole wheat versions of these rolls if you prefer.

Store the leftovers at room temperature in an airtight container for up to three days. For longer storage, wrap the rolls individually in plastic wrap, place them in an airtight, freezer-safe container or heavy-duty freezer bag, and freeze them for up to 3 months.

To reheat the rolls, place them on a baking sheet and cook at 350 degrees until heated through.

Ingredients

  • ½ cup butter
  • 2 cups cold whole milk
  • 2 tablespoons granulated sugar
  • 2 packets Rapid Rise instant yeast
  • 2 large eggs, whisked
  • 1 teaspoon salt
  • 5 ½ cups all purpose flour
  • ½ cup diced jalapenos
  • 1 ½ cups sharp cheddar cheese, shredded
  • ¼ cup butter, melted

Instructions

  • In a medium Dutch oven or saucepan, over medium low heat, melt ½ cup butter.
  • Pour cold milk into the pan, and stir to combine.
  • Add sugar, stir, and then remove pot from heat (milk mixture should be lukewarm).
  • Next, add yeast and stir well.
  • Put on the lid and let sit for 15 minutes. Mixture will be nice and bubbly.
  • Pour whisked eggs and salt into the pan. Stir to combine.
  • Add flour, a little at a time, stir, add more flour, and repeat until all the flour is in the pan.
  • Cover and let rise again until the dough has doubled in size, 40-50 minutes.
  • Place dough on a lightly floured surface and knead a few times.
  • Take a little ball of dough and it should weigh about 2. 5 ounces.
  • Add some jalapenos and shredded cheese into each dough ball. Tuck the dough in and the bottom a few times and pinch the bottom to seal. Top of the dough should be smooth.
  • Place each dough ball into a deep 9×13 baking dish that has been sprayed with non-stick cooking spray.
  • Repeat with the remaining dough. Should make about 20 rolls.
  • Place a kitchen towel over the top of the baking dish and let rise for 45 minutes until they double in size.
  • Preheat the oven to 350 degrees.
  • Place the baking dish on the center rack for approximately 30 minutes or until golden brown.
  • Remove from the oven and brush the tops of the rolls with melted butter immediately.
