These chicken salad sliders are loaded with tender chicken, crunchy celery, the bite of red onion, and a pop of sweetness from grapes. They’re all packed into soft brioche buns to create a delicious appetizer or main course that’s ready in just minutes!

When it comes to appetizer recipes, sliders are always at the top of our list. Who are we kidding? They’re also at the top of our list when it comes to main dish recipes, too!

These hand-held sandwiches are fantastic because they can be served as part of a larger party spread, or they can be a fun main course when you serve a few at a time.

We love serving variations like sausage pepperoni pizza sliders at parties or ham and cheese sliders for fun lunches or dinners for our family. Now, we’ve added another tasty, versatile recipe to our list.

How to Make Chicken Salad Sliders

Boil the chicken. Then, cool until safe enough to handle and shred.

Combine the mayo, vinegar, salt, and pepper in a large bowl. Then, mix in the shredded chicken.

Add the remaining ingredients, cover, and chill.

Fill slider buns with your chicken salad and enjoy!

Tips

  • Cubing your chicken isn’t required, but it does help it cook faster. It also cools faster, so you can shred it more quickly.
  • Shred your chicken as soon as you can safely handle it. It will be so much easier.
  • Cool your chicken before adding it to the mayo. You don’t want to warm that up too much!
  • Chill your chicken salad for at least a couple of hours so the flavors can meld together nicely.
  • Make only as many sliders as you think will be eaten in a setting. It’s much better to store your chicken salad separately and make more sliders than to have soggy buns.

Chicken Salad Sliders FAQ

How do you keep chicken salad sliders from getting soggy?

First and foremost, prepare them just before serving. You can also add a physical barrier, like lettuce on the bottom and cheese on top, to block the moisture and add more flavor. Toasting the buns also works well, making it harder for moisture to penetrate them.

What should not be done when preparing chicken salad?

A major – and common – mistake is adding warm chicken to the salad dressing. You should shred your chicken while it’s warm, but cool it before adding it to the dressing.
In addition, rubbery, overcooked chicken ruins chicken salad, so be sure not to overcook it.
Finally, season your salad liberally and consider adding fresh herbs and other flavorful ingredients like chopped nuts, grapes, or raisins for more flavor.

Should you boil or roast chicken for chicken salad sliders?

Both options work very well. Boiling chicken cooks it more quickly, resulting in a faster cooking method. Meanwhile, roasting chicken gives the salad a deeper, richer flavor.

Ingredients

  • 3 boneless skinless chicken breasts, diced into 1-inch chunks
  • 1 ยฝ cups mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon black pepper
  • ยฝ teaspoon salt
  • 1 cup green grapes, cut into 4 pieces
  • 1 small red onion, finely diced
  • 2 green onions, sliced
  • 1 cup chopped celery
  • 24 brioche slider buns

Instructions

  • Add chicken to a large pot of water and bring to a boil over medium heat until chicken is thoroughly cooked.
  • Drain water, remove chicken and place on a cutting board to cool a bit, then shred. Let cool a bit while gathering the other ingredients.
  • In a large bowl, add mayonnaise, apple cider vinegar, pepper and salt. Stir until combined.
  • Add shredded chicken to the mayo mixture and stir to combine.
  • Next, add grapes, red onions, green onions, and celery, stir.
  • Cover and place in the refrigerator to chill.
  • Add chicken salad to each slider bun and enjoy.

Storage
  • Refrigerate the chicken salad in its own container for up to 3 days.
  • Freezing is not recommended.ย
