This irresistible, cheesy jalapeno corn dip is loaded with melty Monterey Jack, spicy Colby Jack cheeses, and cream cheese as the base of this delicious dip. Next, it’s studded with pops of sweet corn, fresh green onions, and fresh cilantro. Crumbled bacon and diced jalapenos offer a smoky kick of heat to the dip. Baked to melty perfection, this hot dip appetizer is guaranteed to be a crowd-pleaser for sure.

Do you love jalapeno poppers? You do? That’s good. Do you also love corn dip? Oh, good. I was hoping you’d say that, because this cheesy jalapeno corn dip is like if jalapeno poppers and corn dip fell in love, got married, and had a baby. A delicious, spicy baby. This dip is one of my favorites for Taco Tuesdays, game day, or any time I want to add a kick of spice to a party or special occasion. It’s an easy, delicious dish I’ve been serving for years, and I rarely have any leftovers when I bring it to a party. When I make it at home, it rarely lasts longer than a couple of days!

Cheesy Jalapeno Corn Dip

This tasty dip starts with a mix of cream cheese, mayo, and sour cream. I combine that with two kinds of cheese, jalapenos, onions, cilantro, corn, and bacon. Then, I bake it until it’s golden, melty, and bubbly. It’s absolutely delicious with a big kick of flavor and heat, and it only takes a few minutes from start to finish. I’m in and out of the kitchen in about 40 minutes, and I’m the party’s hero. This is one seriously delicious dip!

In a medium bowl, beat the cream cheese until light and fluffy. Then, add the mayonnaise and sour cream and mix until combined.

Ingredients

  • 16 oz cream cheese, softened
  • 1 ยฝ cups Monterey jack cheese, shredded
  • 1ยฝ cups Three alarm cheese, grated, divided (any spicy cheese will work)
  • ยฝ cup mayonnaise
  • ยฝ cup sour cream
  • ยฝ cup green onions, sliced
  • โ…“ cup cilantro, chopped
  • 12 ounce bacon, cooked crisp and crumbled
  • 2 jalapeรฑos, seeds removed, chopped up small
  • 15 ounce whole kernel corn, drained

Instructions

  • In a large frying pan, fry bacon until crispy. Remove and place on a plate lined with paper towels.
  • Preheat the oven to 350ยฐ and spray a 2-quart baking dish with a non-stick cooking spray. Set aside.
  • In a medium bowl, beat cream cheese until light and fluffy, then add mayonnaise and sour cream. Mix until combined.
  • Add both cheeses (saving ยฝ cup for topping), jalapeรฑos, onions, cilantro, and corn, to the mixing bowl. Stir.
  • Crumble bacon, add to bowl, stir, saving a small amount for the topping.
  • Spoon into the prepared baking dish. Top with remaining cheese and bacon and pop in the oven.
  • Bake for 20-25 minutes until the cheese is bubbly and mixture is heated thoroughly.
  • Remove from the oven, serve hot with corn chips or tortilla chips.
