Cheesy Jalapeno Corn Dip

- 16 oz cream cheese, softened
- 1 ½ cups Monterey jack cheese, shredded
- 1½ cups Three alarm cheese, grated, divided (any spicy cheese will work)
- ½ cup mayonnaise
- ½ cup sour cream
- ½ cup green onions, sliced
- ⅓ cup cilantro, chopped
- 12 ounce bacon, cooked crisp and crumbled
- 2 jalapeños, seeds removed, chopped up small
- 15 ounce whole kernel corn, drained
In a large frying pan, fry bacon until crispy. Remove and place on a plate lined with paper towels.
Preheat the oven to 350° and spray a 2-quart baking dish with a non-stick cooking spray. Set aside.
In a medium bowl, beat cream cheese until light and fluffy, then add mayonnaise and sour cream. Mix until combined.
Add both cheeses (saving ½ cup for topping), jalapeños, onions, cilantro, and corn, to the mixing bowl. Stir.
Crumble bacon, add to bowl, stir, saving a small amount for the topping.
Spoon into the prepared baking dish. Top with remaining cheese and bacon and pop in the oven.
Bake for 20-25 minutes until the cheese is bubbly and mixture is heated thoroughly.
Remove from the oven, serve hot with corn chips or tortilla chips.
