This delicious comfort food recipe is always a great choice for a family dinner because it’s quick, easy, and delicious. With just your slow cooker, you can create a hearty meal that will have you in and out of the kitchen in not time. It couldn’t be easier!

My family loves chicken, and we’re all about the stuffing life. More than that, my family loves that this meal feels almost like the holidays any time of year! It turly makes this recipe a huge winner in my home.

Boneless skinless chicken breasts are topped with seasonings, Swiss cheese, and Stove Top stuffing, then slow-cooked for hours creating a meal that’s loaded with tender, juicy chicken, classic stuffing flavor, and a healthy dose of nostalgia.

Ingredients

  • Chicken breasts: Use boneless and skinless for less prep and lean protein. If you prefer chicken thighs they work well too or you can use chicken tenderloins too.
  • Onion: Fresh onion brings a bit of sweetness and more umami flavors to the stuffing casserole. They also add a bit of moisture to the slow cooker helping the chicken cook.
  • Swiss cheese: With its slightly sweet and nutty flavor, it is a finishing touch on this dish that really works well. You can certainly swap it out with another type of cheese if you prefer. Sharp cheddar, Monterey jack, and Fontina work great too.
  • Seasoning: A bit of garlic powder, Slap Ya Mama seasoning, and black pepper adds more flavor to the already seasoned stuffing mix.
  • Stove Top Stuffing: This is my go-to brand but any stuffing brand will work. Feel free to experiment with different varieties such as sourdough, cornbread stuffing, or others.
  • Butter: Adds rich flavors and some moisture. It’s preferred over using oil.
  • Canned Soup: Cream of chicken soup or cream of mushroom soup are great options depending on your preference. It adds a nice creamy base as well as boosts the overall flavor.
  • Diced green chilies: My secret to making a unique and great tasting Crock Pot chicken stuffing. They add an earthy flavor and a bit of heat if you choose the hot variety.
  • Chicken broth: I prefer and recommend using low-sodium broth. This keeps it from being overly salty since we are using several prepared products which are already seasoned.

Variations

  • Make It Meatier. Brown some Italian sausage crumbles in a skillet and combine it with the stuffing layer on top of the chicken. It really makes it feel like the holidays.
  • Add Veggies. Turn it into a one-pot meal by add a package of frozen vegetables to the stuffing.
  • Add Nuts or Cranberries. Add some chopped pecans and walnuts or dried cranberries to the stuffing mixture. The nuts add a nice crunch and the cranberries a burst of tart sweetness.

How to Make Chicken and Stuffing in the Crock Pot

Making this recipe is a snap. In fact, the most work you’ll do is going to the store to get the ingredients. Talk about easy!

  • Step 1: Prep. Grab your 6-quart slow cooker and spray it with nonstick cooking spray.
  • Step 2: Layer the Chicken. Add the onions to the bottom of the slow cooker followed by the chicken breasts. Sprinkle the breasts with the seasoning mixture and place two slices of Swiss cheese on top of each breast.
  • Step 3: Add the Top Layers. Add the stuffing mix on top of the chicken. Drizzle it with melted butter and spread the cream of chicken soup over the top. Finally, add the diced green chilies and chicken broth to the pot.
  • Step 4: Cook. Cover and cook on high for 4 ยฝ to 5 hours or on low for 7 to 8 hours.

Serving Suggestions

This delicious slow cooker chicken and dressing tastes like the holidays any time of year. Its flavors are also quite basic and rustic, so there’s almost no limit to what you can serve with this delicious recipe. Some of my favorites are:

  • Vegetable Sides: You can really enjoy this dish with any simple vegetable such as mixed vegetables, broccoli, and cauliflower. I especially love my lemon pepper asparagus or Cajun corn on the side.
  • Rolls or Bread: Try my jalapeno cheddar biscuits or some dinner rolls on the side!
  • Added Flavor: For more holiday inspiration enjoy with a spoonful of cranberry sauce or gravy.

Expert Tips

  • Easy Cleanup. Be sure you spray your slow cooker with nonstick spray to prevent sticking and burning. You can also use slow cooker liners to cleanup even easier.
  • Layer as Directed. Always place your onions on the bottom so they get nice and soft.
  • Store. Place your leftovers in in the refrigerator in an airtight container for up to three days or up to three months in the freezer. Place the leftovers in a baking dish and bake it covered at 350ยฐ F for about 30 minutes or until heated through when you’re ready to enjoy again.

Recipe FAQs

Can I use frozen chicken breasts for this chicken and stuffing casserole?

No. Not many people know this, but the USDA advises to always thaw meat and poultry before cooking it in the slow cooker for safety.

Can I make this dish in the oven?

Sure! Layer the dish in a casserole dish instead of the slow cooker. Cover with foil and bake for 45-50 minutes, or until the chicken is fully cooked.

How do I know my chicken is cooked?

The best way to ensure the chicken is fully cooked is to check it with a meat thermometer. It’s safe to eat when it’s at 165ยฐ F. You can stop cooking at 160ยฐ F and let it rest for 10 minutes. It will continue to cook through carry over cooking but won’t end up overcooking the chicken.

Can I use leftover or rotisserie chicken instead?

Sure you can! I suggest sauteing the onions in advance with some butter and then layer them in the crockpot and top with the shredded chicken. Continue layering on the other ingredients as directed. Reduce the cooking time by at least half since you simply need to cook the stuffing and heat the chicken.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 medium onion
  • 8 slices Swiss cheese
