Making this ham egg and cheese puff pastry is incredibly easy. It only takes about 45 minutes from start to finish, and about 30 minutes is just the baking time. Anyone can make it!

Step 1: Prep

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Step 2: Scramble the Eggs

Whisk the eggs, milk, garlic powder, and black pepper in a medium bowl. Then, scramble them over medium heat until almost done. They should be a bit wet.

Step 3: Cook the Ham

Cook the diced ham, bell pepper, and opinions in a large frying pan over medium heat until the veggies are tender.

Step 4: Prepare the Puff Pastry

Gently open your mostly thawed puff pastry sheet and roll it a few times on a lightly floured surface to even it out. Place both pastry squares on the prepared lined baking sheet.

Step 5: Fill

Sprinkle ยฝ cup of shredded cheese down the center of each pastry sheet. Then, divide the scrambled eggs evenly between the pastry sheets. Finally top the eggs with the ham and veggie mixture followed by the rest of the cheese.

Cut the sides of the pastry sheets on an angle all the way down, being sure not to cut to close to the filling. Then, fold the strips over the filling in an overlapping pattern.

  • Your puff pastry should be mostly thawed but still very cold when you work with it. This helps it achieve the best texture when baked.

Any kind of ham will work well in this recipe. As long as it’s thick enough to dice, use your favorite. Ironically, breakfast ham is the only kind of ham that wouldn’t work well. It’s sliced thin, so it’s not suitable for dicing into wonderful little chunks.

How long will this breakfast pastry braid last in the fridge?

This breakfast pastry braid will stay fresh for up to 3 days in the refrigerator. Be aware that the reheated pastry won’t have the same flakiness it does when it’s fresh.

What other meats would be good to use instead of ham?

Breakfast sausage, bacon, ground beef, and chorizo will all work well in this recipe.

Ingredients

  • 8 large eggs
  • ยผ cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 cups ham, chopped into small pieces
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 1 tablespoon vegetable oil
  • 2 cups sharp cheddar cheese, shredded
  • 1 box puff pastry sheets

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, whisk eggs, milk, garlic powder and black pepper together, and scramble over medium heat until almost done. Eggs can still be a bit wet because they will fully cook in the oven.
  • In a large frying pan, heat oil over medium heat. Add diced ham, bell pepper, and onions, stir, and cook until veggies are tender.

Pastry

  • Gently open up the mostly thawed puff pastry sheet and roll a few times until square on a lightly floured surface.
  • Place both pastries on the prepared baking sheet.
  • Sprinkle ยฝ cup of shredded cheese down the center of each puff pastry.
  • Add half the scrambled eggs to one pastry, then the remaining eggs on the other pastry.
  • Next, spoon half the ham mixture on one pastry, and then the remaining ham mixture on the second pastry.
  • Top each pastry with ยฝ cup of cheddar cheese.
  • Cut the side pieces at an angle and continue to make cuts into the pastry along each side making sure not to cut too close to the filling.
  • Start folding each piece over each other like a braid and secure.
  • In a small bowl, whisk together egg and water.
  • Brush egg wash over both pastries, and bake for 25-30 minutes or until golden brown.
