Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a medium bowl, whisk eggs, milk, garlic powder and black pepper together, and scramble over medium heat until almost done. Eggs can still be a bit wet because they will fully cook in the oven.
In a large frying pan, heat oil over medium heat. Add diced ham, bell pepper, and onions, stir, and cook until veggies are tender.
Pastry
Gently open up the mostly thawed puff pastry sheet and roll a few times until square on a lightly floured surface.
Place both pastries on the prepared baking sheet.
Sprinkle ½ cup of shredded cheese down the center of each puff pastry.
Add half the scrambled eggs to one pastry, then the remaining eggs on the other pastry.
Next, spoon half the ham mixture on one pastry, and then the remaining ham mixture on the second pastry.
Top each pastry with ½ cup of cheddar cheese.
Cut the side pieces at an angle and continue to make cuts into the pastry along each side making sure not to cut too close to the filling.
Start folding each piece over each other like a braid and secure.
In a small bowl, whisk together egg and water.
Brush egg wash over both pastries, and bake for 25-30 minutes or until golden brown.
