Beef stew is one of the classics. I think pretty much everyone on every continent has had some form of beef stew, and I’m equally confident that almost all of them loved it. I know I’m a big fan of beef stew. I’ve loved it since I was a little girl, and it was one of the first dishes I learned how to make. When I moved off on my own, I made it a lot because it could feed me for a few days. When I became a wife and mom, I continued to make it for the same reason. Something delicious and hearty like beef stew was the perfect meal for a couple of days, saving me a lot of time. Of course, the fact that Texas is the beef capital of the USA didn’t hurt, either!
I make this beef stew a lot during the fall and winter because it’s so easy, so good, and it saves me so much time and I know you’re going to love it when you make it, too.

Recipe FAQ
Absolutely. Slow cookers are designed to cook meats from raw, so it’s completely safe.
There are two keys – cut choice and time. Chuck roast is the best cut to use because it’s full of collagen and connective tissue. That brings us around to time. Cooking beef stew low and slow lets all that connective tissue in the chuck roast dissolve and make super tender beef.
It’s totally optional. Many people prefer the beef browned before cooking, but some would rather save time and just put it in the crock pot as-is. If you prefer to brown your roast, place it in a large skillet on medium-high heat and let brown on each side for 1-2 minutes before placing in the slow cooker.
You can, but it’s very difficult. Slow-cooked stew is incredibly forgiving, but you can cook it so long that the beef actually becomes tough and the juices begin to evaporate. However, that takes several hours of cooking beyond the time that the stew is actually ready.
I like to use cream soup to keep my stew thick without any extra work. However, if your stew is too thin, you can use a slurry of flour and water or a cornstarch slurry. Mix either into the stew and cook it on high for an hour until it thickens up.
How to Store, Reheat, and Freeze Leftover Beef Stew
Store this stew in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze it for up to 3 months in an airtight, freezer-safe container.
To reheat, just place the stew in a pot and heat over medium-low heat until heated through.
