Ingredients

  • 1 loaf crusty Italian loaf, cubed
  • 2 cups fire roasted corn
  • 1 cup roasted red bell pepper, chopped
  • 2 cups cherry tomatoes, cut in half
  • ยฝ cup red onion, thinly sliced
  • 8 ounces mozzarella, diced

Honey Chipotle Dressing

  • โ…“ cup red wine vinegar
  • ยผ cup honey
  • ยพ cup vegetable oil
  • ยฝ teaspoon oregano
  • ยฝ teaspoon cumin
  • 1ยฝ teaspoons slap ya mama seasoning
  • ยฝ teaspoon ground black pepper
  • 3 tablespoons chopped chipotle in adobo
  • 2 teaspoons garlic, finely minced

Instructions

  • Preheat the oven to 400ยฐ and line a baking sheet with parchment paper or aluminum foil. Set aside.

Toast the Bread

  • Cut bread into 1 – 1 1โ„2 inch cubes.

  • Add all ingredients to a large bowl. Top with vinaigrette and toss to combine.
