Ingredients
- 32 oz tater tots or rounds
- 12 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon onion powder.
- 12 ounce bacon
- 2+ cups sharp cheddar cheese, shredded
- 10 large flour tortillas
- Optional: sour cream, salsa, sliced green onions, diced avocados
Instructions
- Preheat the oven to 425ยฐ and line a baking sheet with parchment paper.
- Place tater tots in a single layer and bake for 20-24 minutes or until tater tots are brown and crispy.
- In a frying pan or skillet, over medium heat, cook bacon until crispy. Remove and place on a plate lined with paper towels.Drain fat. Crumble bacon when cool enough to handle.
- In a large bowl, whisk eggs and seasonings together until combined.
- Add eggs to the frying pan and scramble over medium to low heat, stirring frequently until the eggs are almost fully cooked.
- Crumble bacon and add to the eggs. Stir to combine and finish cooking the eggs until they are done.
