Breakfast Burritos

These breakfast burritos will have everyone coming back for more, even though they'll already be stuffed. Start the day with burritos loaded with tater tots, eggs, bacon, and cheddar cheese. YUM!

  • Preheat the oven to 425° and line a baking sheet with parchment paper.
  • Place tater tots in a single layer and bake for 20-24 minutes or until tater tots are brown and crispy.
  • In a frying pan or skillet, over medium heat, cook bacon until crispy. Remove and place on a plate lined with paper towels.Drain fat. Crumble bacon when cool enough to handle.
  • In a large bowl, whisk eggs and seasonings together until combined.
  • Add eggs to the frying pan and scramble over medium to low heat, stirring frequently until the eggs are almost fully cooked.
  • Crumble bacon and add to the eggs. Stir to combine and finish cooking the eggs until they are done.
  • Sprinkle the shredded cheese over the top of the egg and bacon mixture to melt.
  • Heat tortillas in a pan or over the open flame, on the stove, turning frequently.
  • Add tater tots in the center of each tortilla followed by the scrambled eggs, bacon, and cheese mixture.
  • Optional: Add salsa, sour cream, diced avocados, and green onions, if desired.
  • Wrap up and enjoy!

Notes

Tips
  • Cooking the eggs almost fully before adding the crumbled bacon ensures the bacon remains crispy.
  • You can add a lid to your skillet after adding the eggs to help them melt.
  • Flip your tortillas frequently as they heat. You want them pliable, not burned.
