These strawberry cream cheese bites are simple to make. They feature a flaky pie crust base layered with a sweet cheesecake filling and topped with a burst of fresh strawberry sauce rolled up into bite-size treats. They are baked until golden and then dusted with powdered sugar for a sweet treat the whole family will enjoy.

As you all know by now, I love all kinds of sweet baked goods. Pastries, tarts, crescent rings – I love them all. I’m an especially big fan of anything that combines cream cheese with fruit, which is why I’m sharing this delicious recipe with all of you today. It’s a sort of sweet crescent roll using pie crust with cream cheese and strawberry fillings that I started making years ago. I love this recipe because it makes a great dessert, afternoon snack, brunch item, or sweet treat for parties. You can’t go wrong!

Strawberry Cream Cheese Bites

These delicious bites start with a pre-made, refrigerated pie crust that I bring to room temperature. I cut it into 12 equal triangle slices like a pizza. Then, I top each triangle with a little cream cheese and strawberry filling and roll them up like a crescent roll. After that, I just bake them until golden brown, dust them with powdered sugar, and watch them disappear. They go fast, and I never have leftovers. That’s how you know you have a winner on your hands.

Strawberry Cream Cheese Bites Ingredients

These bites only take a few simple ingredients that you can find in your kitchen or at your local grocery store. The only things you might have to buy are a pie crust, strawberries, and cream cheese. It only takes a quick raid of the pantry and an equally quick trip to store to get everything you need!

  • Pillsbury refrigerated pie crust, room temperature

Strawberry Sauce

  • Fresh strawberries
  • Granulated sugar
  • Water
  • Cornstarch

Cream Cheese Filling

  • Cream cheese
  • Granulated sugar
  • Egg yolk
  • Lemon juice
  • Vanilla extract

How to Make Strawberry Cream Cheese Bites

Making these bites is as simple as the ingredient list. It only takes a few minutes of stovetop cooking, a bit of mixing, and baking. That’s really all there is to it.

Step 1: Prep

Preheat the oven to 375 degrees and spray 2 baking sheets with non-stick spray or line them with parchment paper.

Step 2: Make the Strawberry Sauce

Add the strawberries and sugar to a small saucepan. Then, mix water and cornstarch in a small bowl and add it to the strawberry mixture. Cook on low for 5 to 7 minutes until thickened. Set aside to cool.

Step 3: Make the Cream Cheese Mixture

Beat the cream cheese for 2 to 3 minutes in a medium bowl until fluffy. Then, add the sugar, egg yolk, vanilla, and lemon juice and beat for another 2 minutes.

Step 4: Prepare the Pie Dough

Unroll the pie dough on a lightly floured cutting board. Use a pizza cutter to cut the dough into 12 triangles – just like a pizza. Leave each piece in place.

Step 5: Top and Roll

Spread the cream cheese mixture over each triangle and top it with strawberry sauce. Then, roll up each triangle, starting from the wide, outside edge. This will be a bit messy, but that’s okay! Repeat the process with the other pizza dough in the package.

Step 6: Bake

Place the bites on the baking sheets as you roll. Then, place the sheets in the oven and bake for 20 to 22 minutes or until golden brown.

Step 7: Top and Enjoy

Let the bites cool for a few minutes, then dust them with powdered sugar or drizzle with a simple vanilla glaze. Enjoy!

Ingredients

  • 1 box Pillsbury refrigerated pie crust, room temperature

Strawberry Sauce

  • 1 ยพ cups fresh strawberries
  • ยฝ cup granulated sugar
  • 6 Tbsp water
  • 3 Tbsp cornstarch

Cream Cheese Filling

  • 8 ounce cream cheese, room temperature
  • ยฝ cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 375ยฐ and spray 2 baking sheets with a non-stick spray or line with parchment paper.

Strawberry Sauce

  • In a small saucepan, add strawberries and sugar. Stir.
  • In a small mixing bowl, mix water and cornstarch until combined then add to strawberry mixture.
  • Cook on low for 5-7 minutes until the strawberry mixture has thickened. Set aside to cool.

Cream Cheese Filling

  • In a medium mixing bowl, beat cream cheese until fluffy, about 2-3 minutes.
  • Add sugar, egg yolk, vanilla and lemon juice. Beat for an additional 2 minutes.

Making the Bites

  • Unroll pie dough on a lightly floured cutting board. Using a pizza cutter, cut each pie dough into 12 pieces like a pizza. Leave each piece in place.
  • Spread cream cheese mixture over each pie dough and then add strawberry sauce on top.
  • Take one small piece at a time, roll from the outside edge towards the center of the pie dough (this will be messy but the end results are so good).
  • Continue rolling each strawberry bite and place on the prepared baking sheet. Repeat the process with the second pie dough.
  • Place both baking sheets in the oven for 20-22 minutes, or until golden brown.
  • Remove from the oven, let cool for a few minutes, dust with powdered sugar or drizzle with a glaze over each of the bites.
