Mini Garlic Bread PIzzas

These mini garlic bread pizzas are a quick and easy appetizer, lunch, or dinner recipe made with freshly roasted garlic, two types of mozzarella cheese, and mini pepperonis.

Ingredients

  • 2 French bread sticks, sliced into discs (it’s thinner than a loaf of French bread).
  • 1 garlic bulb, roasted
  • ½ teaspoon olive oil
  • teaspoon salt
  • ½ cup butter, room temperature
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 ½ cup shredded mozzarella cheese
  • ½ cup fresh mozzarella cheese, grated or crumbled
  • 5 ounce mini pepperonis, we didn’t use all of it, and we used Hormel

Instructions

  • How to Roast Garlic
  • Cut ¼ off the head of the garlic.
  • Place the garlic bulb, root side down, on a piece of aluminum foil about 5x5 inches.
  • Drizzle olive oil over the garlic and add a pinch of salt.
  • Wrap the foil around the garlic to seal completely. Place in the air fryer basket and cook at 390 degrees for 20 minutes, (to roast garlic in the oven, place on a baking sheet and bake at 400 degrees for 45 minutes - 1 hour).
  • Remove and once the garlic is cool enough to handle, unwrap.
  • Squeeze the garlic cloves into a small bowl and add butter, oregano, basil, and parsley.
  • Stir until all the ingredients are combined.
  • Add butter mixture to each piece of bread and place on the baking sheet.
  • Sprinkle them with mozzarella and fresh mozzarella. Top with mini pepperonis.
  • Bake at 350 degrees for 13-15 minutes, or until desired doneness is obtained.
  • Serve with marinara or your favorite dipping sauce.

Notes

    • Use a sharp, serrated bread knife to cut the French bread sticks to avoid squishing them while you cut.
    • A 5x5 inch piece of foil is the perfect size for wrapping the garlic.
    • Grate your own mozzarella cheese if possible. Pre-shredded mozzarella has additives to prevent sticking that can impact its ability to melt properly.
