Brisket Philly Sliders

- 1 pound leftover brisket, chopped or sliced
- 1 cup mayonnaise
- ½ pound deli sliced provolone cheese
- 1 green bell pepper, sliced, stem and seeds removed
- 1 red bell pepper, sliced, stem and seeds removed
- 1 small onion, sliced
- 1 tablespoon vegetable oil
- 12 Brioche dinner rolls
Preheat the oven to 350 degrees and line a baking sheet with aluminum foil or parchment paper. Set aside.
In a frying pan over medium heat, add oil and saute peppers and onion until tender and onions are translucent.
Add brisket and cook until warm.
While veggies are cooking, slice dinner rolls in half and cover each side with mayonnaise.
Add ½ a slice of provolone to the bottom of each bun, top with meat mixture, and top with the remaining slices of cheese.
replace the top bun and bake for 7-10 minutes or until the cheese is melted.
Tips
- Use a sharp bread knife to cut the rolls to ensure they hold their shape.
- Prep the rolls while the meat is heating up. This allows you to add the hot meat mixture to the cheese, reducing baking time and ensuring your rolls don't get too brown.
