Country Fried Cube Steak and Gravy

This Southern classic country fried cube steak and gravy is a delicious comfort food recipe that is hearty, delicious and easy to make. Pan fried cube steaks served with homemade gravy.

Country fried steak is a classic in the south. From Florida to right here in Texas and every state in between south of the Mason Dixon line, country fried steak is a staple food. These days, you can find it all over the country, but it’s still most beloved down here in the southern United States. I make this recipe quite often. It’s perfect for lunch or dinner, and it’s a fantastic breakfast when you pair it with biscuits. I’ve even been known to serve it over the biscuits and cover it all in that classic gravy. Oh, it’s so good!

Country Fried Cube Steak

This classic southern dish is so simple, but it’s so good. Cube steak is dredged in a simple flour and egg coating, then it’s pan fried to perfection. After that, we make a creamy, milk based gravy using all those tasty leftover bits in the pan from when we fried the steak. Then we cover the steak in the gravy. It’s perfection. Served with mashed potatoes or biscuits, it’s an easy to make breakfast, lunch, or dinner that everyone always loves.

A Southern Favorite

I can’t think of one southern person I know who hasn’t had country fried cube steak and gravy. In fact, most people I know haven’t just had it, they also make it now that they’ve become adults. It’s one of those generational dishes that just keeps rolling along, passed down from mothers and fathers to their sons and daughters. This tasty beef dish has been around for longer than I or even my grandparents can remember, and it’s long been one of the biggies down here in the south.

Although, it’s a southern favorite, country fried cube steak and gravy has migrated all across the country. You can now find it in diners and restaurants from the southern tip of Florida all the way to the northernmost part of Maine and everywhere in between.

Country Fried Cube Steak Ingredients

It only takes a few simple ingredients to make this delicious beef and gravy feast. Outside of the cube steak, you’ll most likely have all of the ingredients in your kitchen already. If you don’t, you can easily find them at your local grocery store.

  • Cube steaks
  • Montreal Steak Seasoning
  • All purpose flour
  • Eggs, lightly beaten
  • Crisco or vegetable oil
  • Whole milk
  • Salt and black pepper, to taste

How to Make Country Fried Cube Steak and Gravy

Making this recipe is just as straightforward as the ingredient list. It only takes a few simple steps, and you’ll have a southern favorite that everyone will devour.

Step 1: Prep

Make a breading station using a shallow dish for your flour mixture and another shallow dish for your egg. Mix flour, salt, and pepper in one dish and add beaten egg to the other dish.

Step 2: Make the Steak

Season the steak generously with the Montreal Steak Seasoning. Then, dredge each steak in the flour mixture, the beaten egg mixture, and then the flour mixture again. Next, heat the oil in a cast iron skillet over medium-high heat. When the oil is hot, fry the steaks for 3 – 4 minutes per side or until golden brown. Remove the steaks and place them on a plate lined with paper towels.

Step 3: Make the Gravy

Drain all but 2 tablespoons of fat out of the skillet. Then, add 2 tablespoons of dredging flour to the oil, stir. Cook over medium heat for about 1 minute, scraping up any browned bits from the bottom of the skillet. Gradually whisk in the milk and cook for 3 – 4 minutes, stirring frequently, until thickened and bubbly. Enjoy!

**Optional: Add a dash of hot sauce to the gravy if desired.

What to Serve with Country Fried Cube Steak

Although most southerners wouldn’t think of serving anything other than mashed potatoes with country fried steak, I always think it’s important to branch out. And to also remember that this is now served all over the country. With that in mind, here are some of my favorite dishes to serve with this delicious dish.

What is cube steak?

Cube steak is usually top round or top sirloin that’s been tenderized either by hand or by mechanized means. The name cube steak comes from the signature square pattern left in the meat after its been tenderized.

What is the difference between chicken fried steak and country fried steak?

There really is no difference. Many food historians are on record as stating that the names are simply different versions for the same food. Sometimes, what’s called chicken fried steak is breaded in an egg and flour mixture while country fried steak is simply dusted with flour, however, even those methods are interchangeable.

Is country fried steak chicken or beef?

Country fried steak is beef, but some people get it confused because they’ve also heard the term chicken fried beef. This is also beef, however.

Why is my country fried steak tough?

This type of steak is already tenderized, so the main reason it becomes tough is undercooking. When it’s undercooked, the fat can’t melt enough to add moisture and tenderness to the beef.

Ingredients

  • 4 cube steaks
  • 2 tablespoons Montreal Steak Seasoning
  • 1 cup all purpose flour
  • 2 large eggs, lightly beaten
  • ยผ cup crisco or vegetable oil

Instructions

  • Heat Crisco or oil in a large cast iron skillet over medium high heat.
  • Season steak with a generous sprinkling of Montreal Steak Seasoning. Set aside.
  • In a shallow dish, mix flour with salt and black pepper. Dredge each steak into the flour, then dip into the beaten egg and then dredge in the flour again.
  • Fry steaks for 3 to 4 minutes per side, or until golden brown. Remove from the skillet and place on a plate lined with paper towels.
  • Drain all but 2 tablespoons of fat. Sprinkle 2 tablespoons of dredging flour into the oil. Cook over medium heat for 1 minute, scraping up any browned bits from the bottom of the skillet.
  • Gradually whisk in milk. Cook for 3 to 4 minutes, stirring frequently, until thickened and bubbly. Adjust seasonings to taste.
  • Optional: can add a dash of hot sauce to the gravy, if desired.
