Key Ingredients

You’ll find the full list of ingredients and their amounts in the recipe card at the bottom of the post.

A rustic wood surface with all the ingredients placed on it to make shepherd's pie.
  • Ground beef: The hearty base of the filling, adding savory flavor and making the shepherd's pie satisfying and comforting.
  • Onion, carrots & celery: Build a flavorful base while adding a little sweetness, texture, and color to the meat filling.
  • Tomato paste & Worcestershire sauce: Add rich, savory flavor and depth that make the beef filling extra delicious.
  • Potatoes: The star of the topping! They create that soft, fluffy mashed potato layer that pairs perfectly with the savory beef filling.
  • Parmesan cheese: Adds a salty, nutty flavor to the mashed potatoes and helps give the topping a delicious golden finish.
  • Peas: Add a little sweetness, color, and texture that balance the rich beef filling.
  • Thyme & parsley: Bring a fresh, herby flavor that ties the savory ingredients together.

Variations

  • Use ground lamb: Traditional shepherd’s pie is made with lamb. Swap the ground beef for ground lamb for a more classic version.
  • Add mushrooms: Finely chopped mushrooms bring an earthy flavor to the filling. Cook them with the other vegetables so they have time to soften.
  • Switch up the vegetables: Corn, green beans, or additional peas can be used alongside the carrots and celery.
  • Make the topping extra cheesy: Add a little more Parmesan to the potatoes or sprinkle some over the top before baking.
  • Use sweet potatoes: Mashed sweet potatoes make a slightly sweeter topping that pairs nicely with the savory filling.
  • Add a little heat: A pinch of red pepper flakes or a dash of hot sauce can give the beef mixture a gentle kick.
  • Try fresh herbs: Fresh thyme or parsley can add a brighter flavor. Adjust the amount to suit your taste.
  • Make it gluten-free: Check that your beef broth and Worcestershire sauce are labeled gluten-free, as ingredients and brands can vary.

Expert Tips

  • Cut the vegetables into small pieces. Smaller, evenly diced carrots and celery soften more quickly and distribute nicely through the filling.
  • Brown the beef thoroughly. Break up large clumps as it cooks so the filling has a consistent texture.
  • Don’t skip the simmer. Cooking the broth mixture for 10-15 minutes helps it thicken and gives the seasonings time to blend.
  • Keep the filling thick. If it looks very watery, let it simmer a little longer before transferring it to the baking dish. Too much liquid can make the potato layer slide around.
  • Drain the potatoes well. Excess water can leave you with loose, runny mashed potatoes that are harder to spread.
  • Mash while the potatoes are hot. They mash more easily and combine well with the butter and milk while still warm.
  • Add the egg yolk after the other ingredients. Mixing it into the warm potatoes helps it blend evenly. Avoid adding it to extremely hot potatoes all at once, which can cause it to cook unevenly.
  • Spread the potatoes all the way to the edges. A complete layer helps keep the filling tucked underneath and creates a nice finish.
  • Make ridges on top. A fork or spoon gives the potatoes texture and helps create more golden edges as they bake.
  • Let it rest before serving. A few minutes of resting helps the filling settle, so it doesn’t run all over the plate when you scoop it out.

Shepherd’s Pie FAQs

Is shepherd’s pie made with beef or lamb?

Traditional shepherd’s pie is made with lamb, while a version made with ground beef is technically called cottage pie. Ground beef is a popular choice, though, and works wonderfully in this hearty, homemade version.

Can I make shepherd’s pie ahead of time?

Yes! Prepare the beef filling and mashed potatoes, assemble everything in the baking dish, then cover and refrigerate until you’re ready to bake. If the dish is cold when it goes into the oven, it may need extra baking time. Make sure the center is hot before serving.

How do I keep shepherd’s pie from getting watery?

Let the beef filling simmer until the broth mixture thickens, and drain the potatoes thoroughly after boiling. Both steps help keep the layers in place instead of letting liquid pool in the dish.

How thick should the meat filling be before adding the potatoes?

The filling should be moist and coated in a thick, gravy-like sauce, without a pool of liquid at the bottom of the skillet. It will release some moisture as it bakes, so reducing the sauce beforehand helps keep the potato topping in place.

How long does shepherd’s pie last in the refrigerator?

Store shepherd’s pie in an airtight container or cover the baking dish securely and refrigerate for 3-4 days. Refrigerate leftovers within two hours of cooking. For easier reheating, divide larger portions into shallow containers so they cool more quickly.

How long can shepherd’s pie stay in the freezer?

For the best quality, use frozen shepherd’s pie within 3-4 months. Store it in a freezer-safe container or wrap it tightly to limit freezer burn. Label the container with the date so you know how long it has been stored.

Is it better to freeze shepherd’s pie cooked or uncooked?

Both options work. Freezing an assembled, unbaked pie is convenient when you’re preparing dinner in advance, while freezing baked leftovers makes future meals easy to portion and reheat. In either case, wrap the pie securely and thaw it safely in the refrigerator when possible. The mashed potato topping may be slightly softer after freezing.

How do I reheat shepherd’s pie without drying it out?

For a larger portion, cover the baking dish with foil and warm it in a 350ยฐF oven until heated through. Remove the foil near the end to help the potato topping regain its golden texture. For individual servings, microwave in a covered microwave-safe dish, stirring isn’t necessary, but rotate the portion if your microwave heats unevenly. Reheat leftovers to 165ยฐF throughout.
