These pumpkin spice cookies are loaded with the classic flavors of fall in every bite. Soft, chewy cookies are loaded with pumpkin spice baking chips and chopped walnuts, making them the ultimate autumn treat. AND they’re ready in just about 20 minutes.

Our mom is one of those people who jumps fully into fall mode as soon as the first leave begins changing color, so of course, we are, too. We love the whole vibe, especially the tasty food!

This time of year, we lean heavily into pumpkin spice. It’s the classic flavor of fall, and it’s so good in recipes like this pumpkin cream cheese dessert for an after-dinner treat or mini pumpkin spice pancakes for a fall breakfast.

These pumpkin spice cookies are another great fall treat. They’re soft and chewy, full of warm pumpkin spice flavors, and pop with pumpkin spice baking chips and chopped nuts. You can’t beat them.

How to Make Pumpkin Spice Cookies

Whisk the dry dough ingredients in a medium bowl and set aside.

Beat all the wet ingredients except the eggs until combined. Then, beat in the eggs.

Gradually mix the dry ingredients into the wet ingredients until combined. Then, fold in the baking chips and chopped nuts.

Using a 1-inch cookie scoop, drop mounds of dough onto two prepared cookie sheets.

Bake at 375ยฐF until the edges of the cookies begin to brown.

Let the cookies cool on the baking sheets for a couple of minutes. Then, transfer them to wire racks to cool completely.

Ingredients

  • 2 ยฝ cups all purpose flour
  • 1 teaspoon baking soda
  • ยพ teaspoon salt
  • 1 cup butter
  • ยพ cup light brown sugar, packed
  • ยพ cup sugar
  • 1 teaspoon vanilla extract
  • 1 ยฝ teaspoon corn syrup
  • 2 large eggs
  • 9 ounce Nestle Toll House Pumpkin Spice baking chips
  • 1 cup walnuts, chopped

Instructions

  • Preheat the oven to 375ยฐ and line two baking sheets with parchment paper. Set aside.
  • In a medium mixing bowl, whisk flour, baking soda and salt. Set aside.
  • In a large mixing bowl, beat on medium speed, butter, brown sugar, sugar, vanilla and corn syrup together until creamy.
  • Beat eggs into the wet mixture.
  • Gradually add flour a little at a time until all the flour mixture is mixed well.
  • Stir in pumpkin spice baking chips and walnuts.
  • Using a 1-inch cookie scoop, drop on prepared baking sheets.
  • Bake for 9 minutes or until the edges start to brown.
  • Remove from the oven and let sit for a couple minutes on the cookie sheet, then remove and place on a wire rack to cool.

Storage
  • Store at room temperature in an airtight container for up to two weeks.ย 
  • Freeze in single layers separated by wax paper in an airtight, freezer-safe container for up to 3 months.ย 
  • Bring to room temperature before serving.ย
