Chicken cobbler casserole made with deliciously seasoned shredded chicken, mixed vegetables, cheese, and a biscuit topping, all baked to golden perfection. It’s an easy chicken casserole recipe that’s perfect for meals during the week or weekend gatherings! It’s truly a dish the whole family will enjoy.

Chicken cobbler combines the flavor of a super creamy and delicious chicken casserole and a savory cobbler crust! Just like a dessert cobbler, this dish is topped with a flavorful crust that’s savory rather than sweet.

This casserole starts with shredded chicken breasts. Then, I combine it with mixed vegetables, tasty spices, and a combination of chicken broth and cream of chicken soup for a super creamy base. Finally, it’s all topped with Cheddar Bay biscuit mix for a tasty topping that just cannot be beaten.

This chicken casserole recipe is one that will have everyone coming back to the table for seconds. They always love the taste, and you’ll never get tired of how easy it is to make!

Ingredients

You only need some simple ingredients to make this recipe. You’ll find them all easily at your local grocery store.

  • Butter: Adds a richer flavor than cooking oil or margarine. I don’t recommend any substitutions here as it will impact the flavor.
  • Chicken Breasts: Choose skinless and boneless so you don’t have to mess with the bones or skin. If you prefer chicken thighs they work too but may need to cook a bit longer.
  • Vegetable Oil: Use this for cooking the chicken. You can use any type of neutral-flavored oil you prefer.
  • Seasoning for Chicken: Slap Ya Mama seasoning, garlic powder, onion powder, paprika, and red pepper flakes combine to add depth of flavor and spicy kick to the chicken.
  • Frozen Mixed Vegetables: Frozen veggies are perfect for zero prep! We like to use the mixture of green beans, peas, carrots, and corn.
  • Red Lobster Cheddar Bay Biscuit Mix: A much more flavorful biscuit mix for your casserole! It’s perfectly seasoned with hints of cheddar. If you love Red Lobster biscuits, you know what I’m talking about!
  • Whole Milk: Mixed with the biscuit mix to make the topping. I find whole milk is richer in flavor but you can certainly use lower fat milk if you prefer.
  • Sharp Cheddar Cheese: Sharp cheddar brings a tangy and robust flavor to the casserole. You can use mild or medium cheddar if you want smoother flavor.
  • Chicken Broth and Cream of Chicken Soup: Hydrates the casserole while also adding some creaminess and deeper chicken flavor.

Variations

  • Skip Cooking the Chicken. Instead, use shredded rotisserie chicken in place of the chicken breasts.
  • Change up the Vegetables. Add your favorite vegetables to this recipe like corn, carrots, green beans, peas, and broccoli. You can mix and match or even just choose one. Use fresh veggies if you prefer but be sure to diced them very small so they cook in the same amount of time.
  • Mild Flavor. If you don’t like spicy food, omit the red pepper flakes for less heat.
  • Other Cheeses. Cheddar is a classic ingredient but feel free to use any shredded cheese you like.

How to Make Chicken Cobbler

Making this recipe is just about as easy as it gets. It takes minimal effort and just a few minutes.

  • Step 1: Cook the Chicken. Add the chicken to a hot frying pan with a bit of oil and season with Slap Ya Mama, garlic powder, onion powder, black pepper, paprika, and red pepper flakes.
  • Step 2: Flip and Base. Once the chicken has a good sear, add the butter, flip the chicken over, and baste with butter. Cover, reduce heat, and cook for 10 minutes.
  • Step 3: Shred the Chicken. Add the cooked chicken and juices to a large bowl and let it cool until you can safely handle it. Then shred the chicken.
  • Step 4: Construct the Casserole. Add melted butter to your baking dish. Then add the shredded chicken followed by the mixed vegetables.
  • Step 5: Mix the Biscuit Topping. Mix the milk and biscuit mix together and stir in 1 cup of sharp cheddar cheese and the seasoning packet from the biscuit mix.
  • Step 6: Spread Over Top. Mix the milk and biscuit mix together and stir in 1 cup of sharp cheddar cheese and the seasoning packet from the biscuit mix. Add this mixture on top of the vegetables.
  • Step 7: Finish Layers. Mix the broth and cream of chicken soup together and pour over the biscuit mixture. Don’t stir.
  • Step 8: Bake. Bake the casserole uncovered at 350 degrees for 50 minutes or until golden brown. Then, remove it from the oven and immediately top it with another cup of shredded cheese.

Recipe Tips

  • Searing the Chicken. It’s important to get a good sear on the chicken for extra depth of flavor and to retain the juices. You will get the best results by cooking the chicken in a hot pan without moving until you’re ready to flip it.
  • More Cheese After Baking. Top your casserole with the last layer of cheese as soon as you remove it from the oven so it melts over the top for an extra cheesy flavor.
  • Shred the Chicken. Let it cool slightly so you can easily shred the chicken with two forks or a shredding claw.
  • Don’t Stir the Layers. Assemble in the order the recipe is written without any stirring.
  • Storage: Store this cobbler in the refrigerator in an airtight container for up to 4 days. For longer storage, you can freeze it for up to 3 months in an airtight, freezer-safe container.

This easy chicken casserole is a meal in and of itself, but you can pair it with some other great flavors for even more variety to your meal.

Can you make this chicken cobbler in advance?

Partially. Cook and shred the chicken in advance. Then, when you’re ready to bake, assemble the casserole and cook it.

Can I use a different biscuit mix?

Yes, you can but it won’t be exactly the same. The Red Lobster Cheddar Bay Biscuits have a unique flavor you can’t get from regular biscuits.

What’s the best way to reheat this dish?

The microwave is the easiest way to reheat individual servings. You can also reheat it in a baking dish covered with foil at 350ยฐ F until heated through.

Ingredients

  • 2 boneless skinless chicken breasts, shredded
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ยฝ teaspoon red pepper flakes
  • ยฝ cup butter, melted
  • 12 ounce frozen mixed vegetables
  • 2 cups Red Lobster cheddar bay biscuit mix
  • 1 ยพ cups milk
  • 2 cup sharp cheddar cheese
  • 1 ยพ cups chicken broth
  • 10.5 ounce cream chicken soup

Instructions

  • Preheat oven to 350ยฐ

For the Chicken

  • In a large frying pan, add 1 tablespoon of oil and heat over medium high heat.
  • Add chicken, seasoned with Slap Ya Mama, garlic powder, onion powder, black pepper, paprika, and red pepper flakes.
  • Once you have a good sear, add 1 tablespoon of butter to the pan, flip chicken over and baste each breast with the butter.
  • Reduce heat to low, cover and cook for 10 minutes.
  • Add chicken and juices to a large bowl.
  • Let it cool a bit then shred it.

Assembling the Chicken Cobbler

  • In a 9 x 13 baking dish, add ยฝ cup of melted butter.
  • Place shredded chicken in a baking dish, followed by mixed vegetables.
  • Mix milk and biscuit mix together. Stir in one cup sharp cheddar cheese and seasoning packet from biscuit mix. Pour over the top of the veggies.
  • Mix chicken broth and cream of chicken soup together and pour that over the biscuit mixture. Donโ€™t stir.
  • Bake uncovered oven for 50 minutes or until golden brown.
  • Remove from the oven and top with another cup of shredded cheese.
