  • Preheat the oven to 425° and line a baking sheet with aluminum foil. Set aside.
  • In a large bowl, add potatoes, and 1 tablespoon of olive oil. Toss to coat.
  • Sprinkle all seasonings over potatoes, toss.
  • Add bell pepper and onion, stir.
  • Next, add sliced sausage and remaining tablespoon of oil. Stir to coat.
  • Place mixture on prepared baking sheet and spread out in an even layer.
  • Baked for 40-50 minutes, or until the potatoes are tender.
  • Remove from oven and enjoy with a crusty bread and a side salad, if desired.
