Frozen Blueberry Dessert

For The Graham Cracker Crust
- 2½ cups graham crackers, crushed
- ⅔ cups butter, melted
- ⅓ cup sugar
For The Blueberry Topping

For The Graham Cracker Crust
Preheat oven to 350° and spray a 9 x 13 baking dish with non-stick cooking spray. Set aside.
Place graham crackers in a food processor or a large Ziploc baggies to crush.
In a medium bowl, add crushed graham crackers, butter, and sugar and mix until well combined.
Place in the bottom of the prepared baking dish and press down evenly with hands or the bottom of a measuring cup.
Bake in oven for 10-12 minutes. Let cool completely.
For The Blueberry Topping
In a small saucepan, add blueberries, sugar, and lemon juice.
Stirring frequently, bring to a boil and allow blueberries to burst open and sauce to thicken.
Remove from heat, set aside, and let cool completely.
For The Frozen Blueberry Filling
Add 3 cups of blueberries to Vitamix, blender, or food processor and blend until smooth.
In a medium bowl, beat heavy cream until stiff peaks form.
In a large bowl, beat cream cheese and powdered sugar together. Add sweetened condensed milk, vanilla, and blended blueberries. Mix until combined.
Next, add the whipped cream, beat until combined then fold in chopped blueberries.
Spread mixture over cooled graham cracker crust and smooth evenly.
Top with blueberry topping and cool whip. Cover with plastic wrap and place in freezer for 3-4 hours or until the filling has set.
