Easy Sausage Potato Skillet

This hearty and delicious smoked sausage and potatoes skillet is a quick and easy meal that can be on the table in about 35 minutes and makes the perfect weeknight dinner.

  • Heat olive oil in a large cast iron skillet or large frying pan over medium heat.
  • Add smoked sausage and cook until browned on all sides.
  • Next, add the onions and garlic and cook until the onions are translucent and soft, about 5 minutes.
  • Stir in the potatoes, diced tomatoes, cream of mushroom soup, water, parsley, and all the seasonings. Stir.
  • Bring to a boil, then reduce to low and simmer for 15-20 minutes, or until the potatoes are fork tender.
  • Aa cooked rice into skillet, stir to combine and serve hot.

Notes

  • Slicing the Sausage. Slice the smoked sausage into ⅓ to ½-inch slices for even cooking and easy eating.
  • Cook on Low. You want to simmer the potatoes, not boil them. This keeps them from falling apart why they cook.
  • Prep in Advance. Place the diced potatoes in a bowl of water to keep them from turning brown until you add them to the sausage mixture.
  • Cooking Without Oil: You can cook the sausage in a bit of water if you prefer that instead. I find cooking the sausage with a bit of oil helps to keep it from sticking until the fat inside begins to render. Both ways will work.
