Easy Sausage Potato Skillet
This hearty and delicious smoked sausage and potatoes skillet is a quick and easy meal that can be on the table in about 35 minutes and makes the perfect weeknight dinner.

Heat olive oil in a large cast iron skillet or large frying pan over medium heat.
Add smoked sausage and cook until browned on all sides.
Next, add the onions and garlic and cook until the onions are translucent and soft, about 5 minutes.
Stir in the potatoes, diced tomatoes, cream of mushroom soup, water, parsley, and all the seasonings. Stir.
Bring to a boil, then reduce to low and simmer for 15-20 minutes, or until the potatoes are fork tender.
Aa cooked rice into skillet, stir to combine and serve hot.
- Slicing the Sausage. Slice the smoked sausage into ⅓ to ½-inch slices for even cooking and easy eating.
- Cook on Low. You want to simmer the potatoes, not boil them. This keeps them from falling apart why they cook.
- Prep in Advance. Place the diced potatoes in a bowl of water to keep them from turning brown until you add them to the sausage mixture.
- Cooking Without Oil: You can cook the sausage in a bit of water if you prefer that instead. I find cooking the sausage with a bit of oil helps to keep it from sticking until the fat inside begins to render. Both ways will work.
