Cheesy Potato Foil Packets

These delicious cheesy potato foil packet recipe is super simple to make, loaded with flavor, lots of melty cheese, and is the perfect side dish the whole family will enjoy.

  • Preheat oven to 350
  • In a large mixing bowl, toss potatoes in olive oil and seasonings
  • Divide potatoes into 4 foil packets, close up and place seam side down on a cookie sheet.
  • Place in the oven for 10 mins, remove, flip packets over and place 1 tbsp of butter in each packet.
  • Reseal packets and put back in the oven for 10-15 more minutes or until potatoes are fork tender.
  • Remove from the oven, add ¼ cup of shredded cheese to each packet and let rest for 2-3 mins or until the cheese is melted.

Notes

Recipe Tips

  • Be sure to dice your potatoes into small chunks so they cook quickly and evenly.
  • A large mixing bowl works best for coating the potatoes. You need that extra space to allow the potatoes to move around and get coated on all sides.
  • Don't add your potatoes back to the oven to melt the cheese. By the time you add the cheese, the potatoes are done. Let their heat melt the cheese.
