Instructions

  • Preheat the oven to 350° (after the cookies have chilled) and line a baking sheet(s) with parchment paper. Set aside.
  • In a medium bowl, whisk flour, baking powder and salt together until combined. Set aside.
  • In another bowl, whisk sugar, cocoa powder, vegetable oil, eggs, and vanilla together until well combined.
  • Gradually add the dry ingredients into the wet ingredients. Stir. Add mini chocolate chips, stir to combine.
  • Form dough into a flat circular disk, about 2-inches thick, and wrap it with the plastic wrap. Place in the fridge for 3 plus hours.
  • Using a small cookie scoop, roll cookie dough into balls and then roll into powdered sugar.
  • Place cookie dough balls on the prepared baking sheet 2 inches apart and bake for 10-12 minutes.
  • Remove from the oven and let sit on the baking sheet for a couple minutes then transfer to a wire rack to cool completely.
  • *Place cookie dough back in the fridge while the first batch of cookies bake so the dough stays cold.

Notes

Recipe inspired from Natasha's Kitchen.
  • Chilling the Dough. It's important to shape the dough into a 2-inch-thick disk before chilling. This allows all of the dough to get nice and cold.
  • Minimum 3 Hours Chill Time. Don't rush the chilling process. 3 hours is the minimum chilling time if you want those classic cracks in your cookies.
  • Parchment Paper. I highly recommend it to make the cookies easier to remove from the baking sheet and cleanup a ton easier.
  • Serving Ideas. These are delicious with a glass of milk or a cup of coffee or tea. They also make a great addition to a larger holiday dessert table or cookie box with sweet favorites like these peppermint cookies, gingerbread cake, and this cranberry raspberry pie.
