Ingredients

  • 2 cups leftover sliced lean brisket, maybe use this one
  • 2 French bread sticks, sliced ½ inch thick
  • 15 ounce ricotta cheese
  • ¼ cup chopped parsley
  • ¼ cup chopped green onion
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

  • Preheat oven to 350 degrees and line a baking sheet with aluminum foil or parchment paper.
  • Toast slices of Baguette just until crispy, about 6-8 minutes.
  • In a small bowl, mix ricotta cheese, chopped parsley, green onions, garlic powder and pepper together.
  • Spread ricotta mixture over toasted baguettes.
  • Top with a small slice of warm leftover brisket.
  • Drizzle with balsamic vinegar or barbecue sauce and enjoy.

Notes

Storage
  • Refrigerate for up to 3 days in an airtight container.
  • Microwave at 15-second intervals until warm.
Tips
  • Use a sharp serrated knife and as little pressure as possible to slice the bread. This helps it maintain its shape and pretty crust.
  • Lean brisket is best for this recipe.
  • ½ inch is the sweet spot for the bruschetta toast slices. That's thick enough to stand up to the topping but thin enough for easy eating.
  • Use day-old bread if possible. It's sturdier and toasts beautifully.
