  • Preheat the oven to 350 degrees and line a cupcake tin with paper liners or spray with non-stick cooking spray.

Banana Cake

  • In a large bowl, beat butter and sugar together until nice and creamy.
  • Add the eggs and vanilla, and beat until combined.
  • Next, add the flour, baking soda, and salt and beat just until combined.
  • Stir in the mashed banana until combined.
  • Fill each cupcake liner ⅔ full and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Cream Cheese Frosting

  • In a medium bowl, beat cream cheese and butter together. Add vanilla and beat until combined.
  • Gradually add powdered sugar and beat until smooth and creamy.
  • Once cupcakes have cooled completely, add the frosting and enjoy.
