Bacon Wrapped Mini Meatloaf

These bacon wrapped mini meatloaves are so tasty and easy to make. They are oven baked and topped with barbecue sauce, and they are always the hit at a party, game day celebration, backyard barbecues, or a midday snack.

Ingredients

Meatloaf

Topping

  • ½ cup barbecue sauce
  • ½ cup ketchup

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil and place a wire rack on top of the baking sheet. Set aside.

Meatloaf

  • In a large bowl, mix all ingredients except the topping ingredients.
  • Shape into 2-inch oblong meatloaves.
  • Wrap a piece of bacon around each one and place on the prepared baking sheet and rack. Secure each one with two toothpicks to keep the bacon in place.

Topping

  • In a small bowl, stir barbecue sauce and ketchup together. Spread over the top of the meatloaves. Brush again half way through, if desired.
  • Bake for 30-35 minutes or until the internal temperature is 165, and the bacon is crispy.

Notes

  • Don't overwork the meatloaf mixture. Overmixing causes dry meatloaf.
  • The easiest way to mix your meatloaf is with clean hands.
  • It's important to use a baking rack so your meatloaves aren't sitting in grease.
