Bacon Egg Bites

These bacon egg bites are the perfect grab-and-go breakfast, with seasoned, fluffy eggs and smoky bacon in every bite.

Ingredients

  • 8 large eggs
  • 1 green bell pepper stem, seeds removed, diced
  • 2 green onions chopped
  • 12 ounces bacon crumbled
  • ½ teaspoon minced onions
  • ½ teaspoon Slap Ya Mama seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt

Instructions

  • Preheat the oven to 350 degrees and spray a 12-count muffin tin with non-stick cooking spray.
  • Fry bacon until desired crispness is obtained. Set aside to cool, then crumble.
  • In a large bowl, whisk eggs until combined.
  • Add the seasonings and whisk until combined.
  • Next, add the diced green bell pepper, chopped green onions, and crumbled bacon. Stir.
  • Pour into the prepared muffin tin and bake for 20 minutes.
  • Remove from the oven and enjoy.

Notes

Tips
  • Spray the muffin tin well so the egg bites release easily.
  • Don’t overbake them, or they can become rubbery.
  • Use freshly cooked bacon for the best flavor.
  • Let them cool slightly before removing from the pan.
  • Whisk the eggs really well for fluffier egg bites.
