Although, you might think I’m anything but health-conscious when you look at some of the recipes I’ve featured on my site, the truth is, I try to balance my comfort food with healthy food. Now, that’s not to say that I don’t always try to make delicious meals. I do. After all, food is a huge part of our lives, it should always be delicious. Meals should be a chore, not a joy. To that end, I always strive to make healthy meals that are also packed full of flavor, and this spinach artichoke past hits that mark perfectly.
Spinach Artichoke Pasta
This is one of my favorite dishes to make. It’s packed with flavor, and it’s also healthy. That’s the golden combination, in my opinion. Rotini noodles are mixed with chicken sausage, artichoke hearts, onions, garlic, cheese, and spices to create a meal that’s an overall healthy dish and just packed full of flavor. Every bite is delicious, and it’s light enough that it can fit into almost anyone’s healthy lifestyle. It’s become one of my go-to pasta dishes over the past several months, and nobody’s complaining, let me tell you!
The great thing about pasta recipes like this is that you can do so much with them. That pasta base lends itself so well to experimentation. That means that this one recipe can turn into as many variations as your imagination allows!
I use rotini noodles, but you can use any shape and variety you like. Any short noodle will work, and you can make this pasta even healthier by using whole grain pasta.
Any sausage will taste delicious in this recipe, as well. Choose your favorite and whip it up! Great options include:
- Chicken sausage
- Turkey sausage
- Pork sausage
- Summer sausage
- Andouille sausage
- Polish sausage
For a bigger kick of healthy goodness, try adding your favorite vegetables. Almost any vegetable will work in this recipe, but some of my favorite options for a dish like this include:
- Mixed vegetables
- Red pepper
