Sheet pan meals have exploded with popularity over the past few years, and with good reason. They’re super easy and super delicious. I mean, that’s the best combo for any recipe if you ask me. I remember the days of doing everything in separate pans, baking sheets, skillets, and the like. It was a ton of work and even more dishes. And while those days taught my kids the value of hard work (no way I was washing dishes after making all of that food), it was kind of a bummer at times. That’s why I went full speed ahead when I discovered sheet pan meals. This delicious sheet pan lemon pepper chicken with potatoes and Brussel sprouts is a perfect example of why I love this cooking method so much.

I’ve been making lemon pepper chicken for years. I just love the flavors so much. Tangy lemon and zesty pepper create a fantastic flavor combination with the tender, juicy chicken breast. I’m particularly fond of this sheet pan version because I can make it all at one time, and that includes the vegetables. With this recipe, I have a super easy version of lemon pepper chicken that gives me all that tender, juicy chicken, lemon and pepper flavor, and perfectly cooked Brussel sprouts and potatoes. It’s a complete meal that’s completely easy to make!

It only takes a few simple ingredients to make this delicious dish. Many of them are already in your kitchen right now, no doubt, and those that aren’t can be easily found at your local grocery store.

For the Vegetables

  • Baby Yukon gold potatoes – washed and cut into quarters
  • Brussel sprouts – washed, trimmed, and cut in half
  • Olive oil
  • Kinder’s Buttery Steakhouse seasoning
  • Lemon pepper
  • Garlic salt
  • Juice from 1 lemon

For the Chicken 

  • Chicken breasts, boneless and skinless
  • Olive oil
  • Kinder’s Buttery Steakhouse seasoning
  • Lemon pepper
  • Garlic powder

How to Make Sheet Pan Lemon Pepper Chicken

Making this recipe is just as easy as gathering up the ingredients. It’s a marvel of simplicity that produces a truly marvelous dish.

Step 1: Prep

Preheat the oven to 350 degrees and line a large rimmed baking sheet with aluminum foil or parchment paper. Spray the foil with nonstick cooking spray and set aside. Then place the chicken breasts on a cutting board and cover them with plastic wrap, Use a meat tenderizer to pound the chicken to the desired thickness.

Step 2: Season the Vegetables

Place the potatoes and Brussel sprouts in a large bowl and drizzle them with olive oil. Then, sprinkle the seasonings over them. Stir well to coat them evenly. Then, spread the veggies evenly over the prepared baking sheet. Pour fresh lemon juices over the vegetables and set them aside.

Step 3: Season the Chicken

Place the chicken breasts on the baking sheet with the vegetables. Then, drizzle oil over both sides of the breasts and sprinkle them evenly with seasonings. Squeeze more fresh lemon juice over the chicken breasts and top with lemon slices.

Step 4: Bake and Enjoy

Bake in the oven for 30 to 35 minutes. Serve and enjoy! Store any leftovers in an airtight container and place them in the fridge for 2-3 days.

Ingredients

For the Veggies

  • 1 pound baby Yukon gold potatoes washed and cut into quarters
  • 1 pound brussel sprouts washed, trimmed, and cut in half
  • 1 tablespoon olive oil
  • 1 tablespoon Kinder’s® Buttery Steakhouse seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon garlic salt
  • Juice from 1 lemon

For the Chicken

  • 2-3 chicken breasts boneless and skinless
  • 1 tablespoon olive oil
  • 1 ½ teaspoons Kinder’s Buttery Steakhouse seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon garlic salt

Instructions

  • Preheat the oven to 350° and line a large baking sheet with aluminum foil.
  • In a large bowl, add in the potatoes and brussel sprouts. Drizzle oil and sprinkle seasoning over veggies. Stir well to evenly coat all veggies. Spread the veggies onto the prepared baking sheet. Pour fresh lemon juice over veggies and set aside.
  • Place chicken breasts on a cutting board and cover with plastic wrap. Using a meat tenderizer, pound chicken to desired thickness and place on the baking sheet with veggies.
  • Drizzle oil over both sides of chicken and sprinkle seasonings evenly. Squeeze fresh lemon juice over chicken breasts and top with lemon slices.
  • Bake in preheated oven for 30-35 minutes or until chicken is thoroughly cooked and potatoes are tender.
  • Carefully remove from oven and enjoy!
