Easy Lemon Cookies with Lemon Glaze

These lemon cookies with lemon glaze are soft and chewy, thick and lemony, refreshing, have a delicious lemon glaze, and are the perfect cookie recipe to make year-round.

I love lemon in everything. From fish to baked goods and everything in between, I can’t think of anything that doesn’t benefit from lemon. In my opinion, that’s especially true when it comes to cakes and cookies. I love making these glazed lemon cookies any time of year. The recipe is easy, and the flavor is so rich and lemony. These are the perfect treats to have on hand for afternoon snacking or to take to a party.

Lemon Cookies with Lemon Glaze

These cookies are a double shot of lemony goodness. A delicious, simple lemon cookie is bathed in an easy lemon glaze that further accentuates the sweet lemon flavor of the cookies. It’s a rich, sweet and tangy combo that always makes a welcome addition to any table. Every bite of these soft and chewy cookies is an explosion of lemon and sweetness that everyone will love.

These cookies are so soft and chewy because they’re a variation of the traditional sugar cookie. They have that rich, buttery flavor and soft, chewy texture that we love about sugar cookies and then they’re covered in a sweet lemon glaze that takes them to an entirely different level.

How to Make Lemon Cookies with Lemon Glaze

Making these lemon cookies with lemon glaze is a very straightforward affair. Both the dough and the glaze are simple recipes, so you’ll have no trouble with this one. It’s a quick and easy recipe.

Step 1: Combine the Wet Ingredients

In a large bowl, beat the butter and both sugars with an electric mixer on medium-high speed, or in a stand mixer with the paddle attachment, until light and fluffy. Then, add the eggs one at a time, making sure to beat them well between each addition. Add the corn syrup and vanilla and mix well. Finally, fold in the lemon zest. Set the wet ingredients aside.

Step 2: Combine the Dry Ingredients

In a medium bowl, combine the flour, baking powder, baking soda, and salt, whisking to combine.

Step 3: Make the Dough

Slowly add the dry ingredients to the wet ingredients, mixing on low-medium speed. When the mixture is well combined, fold in the white chocolate chips.

Step 4: Bake

Using a 1-inch cookie scoop, roll the dough into balls and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 350 degrees for 10 – 12 minutes or until the edges of the cookies are slightly brown. Remove the cookies from the oven and place them on a cooling rack.

Step 5: Make the Glaze

While the cookies are cooling, combine powdered sugar, lemon juice, and milk. Stir until the sugar is dissolved and the mixture is smooth. When the cookies are completely cool, drizzle the icing on them. Allow the icing to dry and enjoy!

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tablespoon corn syrup
  • 1 teaspoon vanilla
  • Zest from 2 lemons
  • 3½ cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1½ cups white chocolate chips
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  • Preheat the oven to 350° and prepare a baking sheet by lining with parchment paper.
  • In a large bowl, beat butter and sugars together until well incorporated.
  • Add in eggs, one at a time making sure to beat well in between.
  • Now, add in corn syrup and vanilla and mix well.
  • Fold in lemon zest and set aside.
  • In a large mixing bowl, add in flour, baking powder, baking soda, and salt. Whisk to combine.
  • Slowly add the dry mixture to the wet mixture while mixing on low-medium speed.
  • When the mixture is well combined, fold in the chocolate chips.
  • Roll dough into 1 inch balls and place on prepared baking sheet.
  • Bake in the oven for 10-12 minutes or until the cookies are done and the edges are slightly brown. Remove from oven and place on cooling rack.
  • In a small mixing bowl, add powdered sugar, lemon juice, and milk. Stir until sugar is dissolved and mixture is smooth.
  • Once cookies are cooled, drizzle icing over cookies. Allow icing to dry
