These delicious pulled pork grilled cheese sandwiches are so easy to make using leftover pulled pork, barbecue sauce, sharp cheddar cheese, and thick cut, Parmesan crusted Texas toast, then grilled to crispy, golden perfection.

  • In a small saucepan, add pulled pork and barbecue sauce.
  • Cook over medium heat until heated through.
  • In a medium bowl, beat butter until creamy.
  • Add grated Parmesan and garlic powder. Stir to combine.
  • Spread a layer of butter mixture on one side of each slice of bread.
  • Place each slice of bread, buttered side down, in a skillet over medium low heat.
  • Place a slice of sharp cheddar cheese on top of the bread.
  • Add a heaping spoonful or two of pulled pork on top of the cheese, another slice of cheese on top of the pork, and the top piece of bread, buttered side up.
  • Grill over medium low heat until golden on both sides.
