Heat a frying pan over medium high heat and cook sausage patties according to package directions.
Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.
In a medium bowl, whisk flour, sugar, baking soda, salt, and baking powder together.
In a small bowl, whisk eggs and buttermilk until combined.
Pour wet ingredients into dry ingredients and gently stir. Batter will be lumpy.
Using a large saucepan, heat oil over medium high heat.
Dip each sausage into the pancake batter and place a few at a time into the hot oil.
Deep fry until golden brown on all sides.
Remove from oil, place on a plate lined with paper towels and repeat until all sausage pancake bites are cooked.
Serve hot with powdered sugar and maple syrup.
