These delicious pancake sausage bites are made with sausage patties that are covered in a light and fluffy pancake batter then deep fried to crispy perfection, dusted with powdered sugar and drizzled with maple syrup.

  • Heat a frying pan over medium high heat and cook sausage patties according to package directions.
  • Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.
  • In a medium bowl, whisk flour, sugar, baking soda, salt, and baking powder together.
  • In a small bowl, whisk eggs and buttermilk until combined.
  • Pour wet ingredients into dry ingredients and gently stir. Batter will be lumpy.
  • Using a large saucepan, heat oil over medium high heat.
  • Dip each sausage into the pancake batter and place a few at a time into the hot oil.
  • Deep fry until golden brown on all sides.
  • Remove from oil, place on a plate lined with paper towels and repeat until all sausage pancake bites are cooked.
  • Serve hot with powdered sugar and maple syrup.
