- 1 tablespoon olive oil
- 12 ounces artichoke hearts, drained and quartered
- 1 cup onions, diced
- 4 cloves garlic, minced
- 4 ounces cream cheese
- 8 ounces sour cream
- 8 ounces Monterey Jack cheese, shredded
- 1 cup parmesan cheese, shredded
- 6 ounces lump crabmeat
Preheat oven to 350° and spray a 9x13 baking dish with non-stick cooking spray.
Heat olive oil in a large skillet over medium heat.
Saute onions until tender then add garlic and saute for another minute.
Place cream cheese into onion mixture and reduce heat to low. Cook until melted, stirring constantly.
Add sour cream, artichoke hearts, crabmeat, shredded parmesan, and 3 cups of Monterey Jack cheese. Stir together.
Pour into prepared baking dish and top with remaining Monterey Jack cheese.
Bake for 35 minutes.
Remove from oven and serve hot with crackers or tortilla chips.
